What I Ate: Tuesday’s Meals
After such a great weekend at the Tone It Up retreat, I was excited to keep the healthy momentum going yesterday!
For breakfast, I started off with yet another smoothie. Have you tried this coconut mango smoothie yet? Get on it! It’s my current favorite. I tried it with toasted coconut on top but truthfully I think I like just plain coconut on top better. I guess I like the chewy texture more than the crunchy texture. Anyways.
I intended on eating an apple for a morning snack but the morning got away from me and before I knew it, it was time for lunch.
Yet another delicious salad from the work salad bar. I’ve been sticking with this combination because it’s yummy and really fills me up. After I demolished this salad I actually had a handful of gummy bears but I forgot to snap a picture. Balance, right? For some reason, I was craving them!
After work, I made a quick stop at Trader Joe’s for a few essentials (namely almond butter and some produce) but I also walked out with a bag of these.
This is what happens when you go to Trader Joe’s on an empty stomach! These little pretzels are so addicting. They taste just like the top of an everything bagel.
Once Alex got home, I started making dinner. I wanted to make a healthier version of mashed potatoes. I’ve made mashed cauliflower in the past and it was fine but I didn’t think Alex would like it. I decided to compromise and make cauliflower mashed potatoes. We both loved it so I’ll share the recipe soon!
I also roasted some chickpeas in the oven. I think roasted might be my favorite way to eat chickpeas.
Here’s a super easy recipe for roasting chickpeas if you’ve never tried it! We were both pretty full after dinner so we digested for a bit and then went for a walk around the neighborhood. I’m loving the temperatures right now! I hope it stays like this!
After we got back from a walk, we finished a documentary on Netflix and I munched on frozen grapes.
These have been my go-to night time snack lately! I’ll probably still be eating these even when the temperatures drop!

I love roasting chickpeas! That’s going to happen a lot this fall. It’s been so hot that I’ve refused to turn on the oven. San Diego weather is a scam. š
Cauliflower mashed potatoes are awesome and I’m curious to see your take on them. I’ve been making this kind of mash before, too, because just potatoes occasionally feel a bit ‘heavy’ on the stomach for me. A former colleague of mine dubbed it ‘potato coma’ :D.
Those pretzel thins sound delicious, too. We sadly don’t get anything like them over here.

Yum! What documentary were you watching? I’m always looking for new ones! Love them! Summer is my favorite favorite favorite time of year so I’m soaking up the sporadic warm days while they last. Fall is a close 2nd favorite though–so lovely!
You did keep good momentum going; these all look like really good eats! I just got to go to Trader Joe’s in California, and it made me a happy camper to get some Cookie Butter and Pumpkin Butter! YUMMM!
Everything pretzel thins, omg I need to find some of those! The snack aisle is definitely dangerous for me when I’m hungry. And great idea to do a cauli potato mash. I too don’t know how my husband would feel about just mashed cauliflower, but I think he would enjoy the combo. I’ll look for the recipe soon =)
That salad looks delicious! My work cafeteria has a salad bar too and I tend to go a little crazy with all the veggie options. I love a big salad!
TJs is dangerous when you’re hungry! Those pretzels are amazing, too. I’m excited for fall and also sad for summer being gone at the same time. I want the beach, but I also want my fireplace. I’m in a weird place right now lol.
I always go to TJ’s on an empty stomach and end up buying snacks to eat on the ride home haha. I’ve never tried those pretzel slims but you bet that next time I go I’m buying them because they sound incredible! Also can’t wait for that mashed cauliflower recipe š
