What I Ate Monday
This week, I’m sharing all the meals I ate on Monday! I hope it gives you some ideas and inspiration for easy vegetarian meals. Let’s dive right into breakfast:
Ice cream for breakfast is a regular occurrence around here… Ok not really. This is just my standard banana smoothie recipe for breakfast, topped with a little extra peanut butter.
Speaking of food-that-looks-like-dessert-but-is-actually-really-healthy… my morning snack involved a couple of these gorgeous treats:
I packed a couple of these mini protein donuts to keep me full through lunch. These are like little cinnamon sugar donuts. So yummy! (If you don’t have a donut pan, that’s no problem! You can make this recipe in a mini muffin pan instead.)
My friend and I walked over to a different cafeteria for lunch (our office has 4 cafeterias!) and the one we went to has a pretty good taco/burrito bar so naturally, I had to get a burrito bowl.
This one had brown rice, black beans, fajita veggies, tomato salsa, corn salsa, onions, cilantro, tomatillo salsa and hot salsa. Clearly, I love salsa. It was delicious.
Around 4:00, I had a few handfuls of these Somersaults.
These are so addicting, you should be impressed that this bag lasted me a whole week. I kept it hidden in my desk drawer so I wouldn’t be staring at it all the time. Otherwise it certainly wouldn’t have lasted that long.
When I got home from work, I went for a quick run with my friend Carin. One I got back, I popped dinner in the oven and hopped in the shower while dinner roasted. I make this red potato, chickpea, & asparagus recipe all the time because it’s one of Alex’s favorites. (Well, if we’re being honest, I love it too.)
It’s so simple but the dill + lemon is delicious.
After dinner I had a piece of dark chocolate from the stash Alex gave me for Valentine’s day. That man knows that I’m basic and predictable. Chocolate wins every time.
That burrito bowl looks AMAZING. I’m going to move to VA just so I can eat at your work’s cafeterias, lol! And those donuts look like the perfect snack too. YUM.

Asparagus is one of my favorite veggies! It’s so simple to prepare but so delicious!
Deeeelish!! I love that you’re a sweets lover but find healthy ways to still get a sweet fix. I drooled over those mini donuts when you shared them earlier, they’re so cute and yummy looking.

When I first opened your post I was like YAY ice cream sundaes and donuts! Yum! Your office cafeteria(s) sounds awesome! So cool that there’s a burrito bar! Somersaults sent me their products to review a MILLION years ago when I first started blogging. I completely forgot about them. I need to pick some up! Your dinner looks awesome, too. What a delicious Monday!
