What I Ate [inside] Wednesday
Richmond got some snow on Monday, so I worked from home. (I’m sure the problem would have been traffic, not really snow, but since schools were closed, I played it safe!)
Since I was actually at home all day, with my camera around, I was able to really document my eats, without having to use my iphone… so that was nice.
Breakfast
Still the standard yogurt bowl: chobani 0% + stevia + mixed berries + bear naked fit granola
I ate breakfast a little later than normal, so I didn’t have a morning snack.
Lunch
For lunch, I warmed up a leftover bowl of my vegan potato soup. The leftovers were just as delicious as the first time, and I had it with a salad + Trader Joe’s Low Fat Peppercorn Ranch Dressing, and a few Guiltless Gourmet Tortilla Chips. Super satisfying lunch!
I wish I had access to my kitchen every day at lunch!
Afternoon snack
I can’t really be trusted around these… so I don’t buy them often. But they were on sale…
I also had a mini vegan mocha muffin, which I had leftover from the batch I took to Sarah’s brunch. Yumm. (They’re made with whole wheat flour and chickpea flour, so they’re packed with fiber!)
Dinner
Since I already blogged about Monday’s pizza adventure, I’ll show you what I ate on Tuesday!
Hummus wrap and a side salad from Xtra’s Cafe, enjoyed with wine, and the company of Brittany, Stephanie, and Megan. Could a Tuesday night get much better? I think not.

Wheat Thins are crazy addictive, I can’t buy them anymore!! My mom buys the ranch flavored ones which are OMG, so freaking good!

And I am the same way with Wheat Thins…hence I put the rest of my box out at brunch so everyone ELSE could eat them up. 🙂 [Well, that and they are the most amazing pair with pimiento cheese…]
So much fun at wine night last night!!! We all definitely need to make a regular occurrence of it… #rva wine special tour ftw! I have some leftover chickpea flour from the brussels sprouts excursion, may have to give these yummy muffins a whirl 🙂

Ooo, I have to be kept away from Wheat Thins too, can totally devour a box in one sitting. They are so good!
I tend to be a creature of habit with my breakfasts too. Those muffins look like I need to make them soon, so yummy. I am a big fan of Jillian’s workouts, I had the 20 min shred and I can’t find it, so sad, her workouts are awesome and I always feel it the next day.
