What I Ate [inside] Wednesday
Richmond got some snow on Monday, so I worked from home. (I’m sure the problem would have been traffic, not really snow, but since schools were closed, I played it safe!)
Since I was actually at home all day, with my camera around, I was able to really document my eats, without having to use my iphone… so that was nice.
Breakfast
Still the standard yogurt bowl: chobani 0% + stevia + mixed berries + bear naked fit granola
I ate breakfast a little later than normal, so I didn’t have a morning snack.
Lunch
For lunch, I warmed up a leftover bowl of my vegan potato soup. The leftovers were just as delicious as the first time, and I had it with a salad + Trader Joe’s Low Fat Peppercorn Ranch Dressing, and a few Guiltless Gourmet Tortilla Chips. Super satisfying lunch!
I wish I had access to my kitchen every day at lunch!
Afternoon snack
I can’t really be trusted around these… so I don’t buy them often. But they were on sale…
I also had a mini vegan mocha muffin, which I had leftover from the batch I took to Sarah’s brunch. Yumm. (They’re made with whole wheat flour and chickpea flour, so they’re packed with fiber!)
Dinner
Since I already blogged about Monday’s pizza adventure, I’ll show you what I ate on Tuesday!
Hummus wrap and a side salad from Xtra’s Cafe, enjoyed with wine, and the company of Brittany, Stephanie, and Megan. Could a Tuesday night get much better? I think not.
Mini mocha muffins sounds awesome. I’ve been obsessed with mini muffins lately! I made half a batch of normal sized muffins and half a batch of mini, and the mini ones disappeared so fast!
My favorite thing about today is that I’m staying home from school. I haven’t gone in a few days since I’ve been sick, but now that I’m starting to feel better it’s just nice to be home!
Eating at home is a nice treat. I used to love snow days and vacation days. Now that I stay-home full time, eating at home is, well, normal. 🙂
I’m off to get that muffin recipe. Sounds wonderful!
Those muffins look awesome. I am also vegan and love all things veggie. I am adding you to my blogroll…you are inspiring!
Aw, thank you so much Maria!! 🙂
mmm everything looks tasty!
And Ive been really wanting to get another jillian dvd so I’ll have to check out your review. She may be crazy, but DANG is she hot. I mean holy biceps! She can totally motivate me to workout ANY day!
Oh wheat thins- I just bought a box for the last party we did at our house and had no issues taking down the leftover ones in a matter of days!
I really really love the sun dried variety. They’re laced with crack- fyi.
Woah I’ve never had that kind! I can’t imagine a more addictive wheat thin than the regular ones…
lovely eats! And blogroll 😉
One of the things I love about being a student is often having access to my kitchen. It makes lunch choices much easier! Your spoon in your breakfast almost looks like a toothbrush handle! Love it!!! 🙂
I love your breakfast combos, they always look so tasty! 🙂 Love your nails too!
Favorite thing about today– being halfway done with this psychotic week haha
I was JUST thinking about this yesterday…I really wish I had access to my kitchen for lunches every day too…I have access to A kitchen but it’s not mine so it’s not as cool 😉
PS I can’t be trusted around wheat thins either. They put the CRACK in cracker.
Seriously, I think they do! And thanks to old high school habits, I CRAVE Diet coke with them. No joke.
All of your eats look so yummy… and I love snow days! There’s something kind of cozy about being trapped inside when it’s snowing out…. ironically, my favourite thing about today is that it’s 55 degrees outside.
