When I want something cozy but I don’t want to think too hard, chili is the answer. It’s cheap, it’s filling, and it’s even better the next day. These vegetarian chili recipes cover pretty much every situation. There’s a classic 3 bean chili, a white bean chili with salsa verde when you want something different, and a pumpkin chili that tastes like fall. Short on time? The Instant Pot version is done fast, and the slow cooker recipes are true dump-and-go meals (add everything, press start, walk away). And if you’re feeding kids, the chili mac is always a hit!

Every recipe is packed with protein and fiber from beans, lentils, or quinoa, so nobody will miss the meat. Most of them freeze well too, so go ahead and make a double batch. Don’t forget the toppings: avocado, shredded cheese, crushed tortilla chips, or a scoop of Greek yogurt!

How to Store Leftovers

Chili usually tastes even better on day two, so I like to make extra. Once the chili has cooled, move it to an airtight container within 2 hours, and it’ll keep in the fridge for 3 to 4 days. To freeze it, portion it into freezer-safe containers or zip-top bags (leave a little room at the top, since it expands as it freezes), and it’ll keep for up to 3 months. Freezing the bags flat saves a ton of space! Thaw it in the fridge overnight, or if you’re in a hurry, reheat it straight from frozen on the stove over low heat, stirring often. You can warm it on the stove or in the microwave, and add a splash of broth or water if it’s thickened up. If you’re making the chili mac, freeze the chili on its own and cook fresh noodles when you’re ready to eat, since pasta gets mushy in the freezer.
