Raspberry Almond Butter Bites
I’m a grazer. I’m a huge fan of snacking all day rather than eating a few big meals. (Or maybe I just love eating and I want to do it all the time? Maybe.) When I come home from work I usually reach for a snack before dinner because otherwise, I’m trying to make dinner as fast as possible… because I’m hungry. Sometimes I just grab whatever I can find but sometimes I decide to class it up a little.
After being out of almond butter for months I finally remembered to pick some up at Trader Joe’s. Of course, they had also had berries on sale and I can’t resist fresh berries… so one thing led to another and snack time ended up being a grown-up version of a peanut butter and jelly. Are you ready for a delicious sweet and salty combination that is easy enough to make for an afternoon snack but adorable enough to serve as an appetizer? Of course, you are.
If you love almond butter, try my flourless almond butter cookies, too!

This might be my new favorite afternoon snack. It’s the perfect combination of sweet and salty. Plus, the Almond Breeze Nut Thin crackers are gluten free, so this is a good recipe for friends with allergies!

What a wonderful little snack! Having a toddler, I’m always on the lookout for easy but healthy snacks that BOTH of us can munch on. This one definitely makes the cut. And it just so happens that I already have all the ingredients on hand – how did I never think of this? You’re a genius Liz!
Raspberries are in season now (I got 4 packs for $5 yesterday), and I have the rest of these ingredients too!! Great idea, Liz 🙂
These look so darn good! Mmmmm, I bet they are the perfect combination of salty, sweet, crunchy and creamy… I cannot wait to make them!
