If you’re craving a sweet treat but you want to eat something healthy, these flourless almond butter cookies are the perfect dessert. Made with just five wholesome ingredients, these chewy cookies are not only easy to whip up but they’re filled with good-for-you ingredients. Using a combination of almond flour and oat flour gives these cookies a perfectly chewy texture, and they’re naturally sweetened with maple syrup. The almond butter adds healthy fat to these cookies, so you don’t have to use any oil or butter.
Ingredients & Substitutions
- Almond butter– I recommend using creamy almond butter. I used Justin’s classic almond butter, which isn’t too thick or too runny. Be sure to use salted almond butter; otherwise, you’ll want to add salt. If you’re using natural almond butter, be sure to stir it well in the container before measuring it into a measuring cup.
- Oat flour- Oat flour, made by simply blending oats into a fine powder, provides a fantastic gluten-free alternative to traditional flours. It’s not only rich in fiber, which aids in digestion and steady blood sugar levels, but also adds a mild, slightly sweet flavor that complements the nuttiness of the almond butter. You can make your own oat flour by blending oats in a blender or food processor until finely ground.
- Almond flour– Almond flour, like almond butter, is high in healthy fats, protein, and vitamin E — all of which are essential for heart health and skin vitality. Its fine texture helps create a tender crumb in flourless cookies that’s hard to achieve with other gluten-free flours.
- Maple syrup– Using maple syrup adds plenty of natural sweetness without the spike in blood sugar associated with refined sugars. It also adds minerals like zinc and manganese, which play a role in boosting immunity and bone strength. You could swap the maple syrup for honey.
- Baking soda– A touch of baking soda ensures that our cookies have just the right amount of lift and softness, making them irresistible.

Almond butter is a great source of healthy fats, mainly monounsaturated and polyunsaturated fats, which are the “good” fats. These can help improve heart health by lowering LDL (bad) cholesterol levels and increasing HDL (good) cholesterol levels. As someone with familial hypercholesterolemia, this is a great ingredient to add to my diet! It’s also packed with vitamins and minerals such as vitamin E, magnesium, and potassium.

These almond flour cookies are really simple and the maple flavor really shines. But if you want to switch things up a bit, here are some things you can add to these cookies! Consider adding a handful of dark chocolate chips, dried cranberries, or chopped nuts to add texture and flavor. A sprinkle of coarse sea salt on top before baking is also delicious if you like the sweet and salty combo. You could also add cinnamon, nutmeg, or vanilla extract to your dough for an additional layer of flavor.

How to Store Leftover Cookies
Once the cookies have cooled completely, place them in an airtight container. You can keep them at room temperature, where they will stay fresh for 3-4 days. If you’d like to keep them for an extended period, these cookies freeze well. Just wrap the baked cookies individually in cling wrap or place them in a single layer on a baking sheet to freeze them initially. Once frozen, transfer them to a freezer-safe bag or container. These sweet treats can be frozen for up to 3 months. When you’re ready to enjoy, simply thaw them at room temperature or give them a quick warm-up in the microwave if you prefer them a bit warm.

Ingredients
- 2/3 cup salted creamy almond butter (see note)
- 1/3 cup oat flour (oats, blended into flour)
- 2/3 cup almond flour
- 1/2 cup maple syrup
- 1/4 tsp baking soda
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or a silicone baking mat.
- In a large bowl, combine the oat flour, almond flour, and baking soda. (Add 1/4 teaspoon of salt if the almond butter is unsalted.) Stir to evenly distribute.
- Add the maple syrup and almond butter. Stir vigorously until smooth.
- Continue stirring until dough becomes stiff and holds its shape. If the dough is too sticky, add 1-2 tablespoons of almond flour.
- Scoop rounded tablespoons of dough using a cooking scoop or roll into balls between your hands.
- Place the cookies 2-3 inches apart on the prepared baking sheet. Repeat with all the dough.
- Bake for 12-13 minutes or until edges slightly darker brown.
- Remove from the oven and allow to cool for at least 5 minutes on the baking sheet before transferring to a cooling rack to cool completely.
Notes
When using natural almond butter, be sure to stir the almond butter so the consistency is even and all the oil has been incorporated before measuring into the measuring cup.
If your almond butter is unsalted, add 1/4 teaspoon salt to the recipe.
You can use a fork to make a crisis cross pattern on top if desired.
