Quinoa Pizza Crust
Did you know you can make a pizza crust out of quinoa flour? It’s true! Whether you’re looking for a gluten free crust recipe or you just want to find a new way to use quinoa flour, this is a unique recipe to try!
This recipe is the perfect example of what happens when I “make do” with what I have on hand. I was still trying to follow the Tone It Up plan and was looking for an alternative type of pizza crust that would be meal-plan-approved. I thought maybe a socca pizza crust, made with chickpea flour would be a good idea. Unfortunately, I couldn’t find any chickpea flour at the grocery store, so I started brainstorming other ideas. I decided if it worked with chickpea flour, why not quinoa flour? And thus, a quinoa pizza crust was born.
What I love about this crust is that you can make it thin and crispy. Oh, and you can top it with anything your heart desires. Keep in mind, you need quinoa flour, not just quinoa. I bought a bag of Bob’s Red Mill, and it was a little on the pricy side, but worth it, in my opinion. Plus, this recipe is vegan and gluten free.
Make sure you bake it until it gets crispy! I like it when the edges have a little crunch.
After that, you can top it with your remaining ingredients. I used tomato sauce and shredded mozzarella cheese. Bake for another 10-15 minutes, depending on your toppings.
The crust itself didn’t have a super-strong flavor (so I’d definitely add in those spices) but it was a great base for the rest of the ingredients. There are definitely lots of options for customizing here.

Ingredients
- 1 1/2 cups quinoa flour
- 1/4 cup of oat flour* or gluten-free flour
- 1/2 teaspoon sea salt
- 1/2 teaspoon Italian spices (I use a blend of oregano, garlic, and crushed red pepper)
- 1/2 cup warm water (you might need up to 2/3 cup of water but start small!)
- 2 tablespoons olive oil
- Toppings of your choice
Instructions
- Preheat the oven to 375 degrees
- Combine the quinoa flour and oat flour, then add in salt and spices.
- Add warm water and olive oil.
- Your mixture will be a little lumpy, and you may need to use your hands to mix it all.
- Spray a baking sheet or pizza stone with olive oil (or just coat it with a paper towel dipped in olive oil) and bake at 375 for about 10 minutes, or until the edges start to brown.
- Add toppings and put it back into the oven until your toppings are cooked!
Notes
I didn’t have oat flour, per say, but I tossed about 1/3 cup rolled oats into my food processor until they turned to flour.

What would you put on top of this quinoa crust?
I just made it. It’s one of the best gluten-free crust. I will use coconut oil instead of olive, xylitol instead of salt and I will try to make cookies 🙂 It may work as well.
So was it supposed to come out crumbly? I followed the directions but when I mixed everything it was still a tad dry. I added a bit more water but the crust never really came together. It stayed crumbly, even after I pre-cooked it, topped it, cooked again and then cut it into slices. It had a good taste but I was expecting it to be a bit more “together”. I am thinking of adding an egg to it next time to help bind it.
Hmm no it shouldn’t be crumbly. It’s not a chewy as traditional pizza crust, but it should slice nicely. I’m sure an egg would help bind it, or maybe a little traditional flour, if you’re not gluten free!
Ok then maybe it was something I did. I made both my quinoa and oatmeal flour so I wonder if that made the difference? Hmmm…

This crust was great! I added 1 Tbsp ground flaxseed to add extra fiber and flavor. My picky 5 year old described the crust as “a spicy cookie.” The whole family loved the pizza. I loved that it was also healthy!
Looks like something I will have to make when visiting Mama Smart…since she has quinoa flour, and then I wouldn’t have to buy any. 😉

Oh wow! I love how simple this is! And I heard the same thing about making your own quinoa flour…AFTER I paid SIX BUCKS for a package at TJ Maxx! Boo! Haha! I’ll definitely have to give this a try since I’m a pizza feign!
I would top my crust with black olives (a pizza must IMHO), onions, bell peppers, sundried tomatoes…and while I’m on a bit of a Mediterranean kick, how about a little feta? Mmmm! 😀

This looks fantastic! I actually have some quinoa flour that has been sitting in my pantry mostly untouched, so this is the perfect use for it. I would top mine with pizza sauce, artichokes, roasted red peppers, and feta!
