Description

If you love pizza, you have to try pizza veggies! Enjoy a rainbow of vegetables seasoned with classic pizza flavors and topped with fresh mozzarella. It’s easy to make and it’s the perfect way to add more veggies to your plate!


Ingredients

  • 1 tablespoon olive oil
  • 4oz baby bella mushrooms, sliced
  • 1 yellow onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 2/3 cup pizza sauce
  • 4oz fresh mozzarella cheese

  • Salt & pepper to taste

Instructions

  1. In a large nonstick skillet, add the olive oil and mushrooms and cook over medium heat for 4 minutes.
  2. Add the onion and bell pepper, and continue to cook for 5 minutes.
  3. Add the zucchini, tomatoes, garlic powder, onion powder, oregano, and crushed red pepper flakes and continue to cook for 5 minutes.
  4. Add pizza sauce and top with mozzarella.
  5. Cover and do not stir.
  6. Cook for 3 minutes until the mozzarella is melted.
  7. Top with additional crushed red pepper flakes and season with salt and pepper to taste.
