Peanut Butter Cup Granola
This peanut butter cup granola is made with creamy peanut butter and a touch of honey then studded with dark chocolate chips for an irresistible snack! These crunchy clusters are delicious on top of your favorite smoothie or yogurt bowl, or you can enjoy it by the handful.
Ingredients and Substitution
- Oats– You’ll want to use old-fashioned or rolled oats and not quick-cooking oats or steel-cut oats. If you’re gluten-free, be sure to use certified gluten-free oats.
- Peanut butter– I recommend using creamy peanut butter, but crunchy peanut butter works, too! Keep in mind if your peanut butter is unsalted or heavily salted, you may want to adjust the salt to taste.
- Honey– I used honey for sweetener, but maple syrup or agave work well if you wanted to make this recipe vegan.
- Vanilla– A little vanilla helps enhance the sweetness.
- Chocolate chips– I prefer mini chocolate chips, so you get a tiny bit of chocolate in every bite, but you can use regular chips or even chopped dark chocolate if you prefer. I’ve also made this with cacao nibs for a less sweet version.
Tips for Making Granola
- Be sure to keep the oven temperature low. I keep an oven thermometer in my oven because it has a tendency to run hot. If your oven gets too hot, the granola will burn before it gets crunchy.
- Combine the peanut butter, honey, and coconut oil first, then stir in the oats. This makes it easier to incorporate all the ingredients evenly.
- Don’t add the chocolate chips until the granola has been removed from the oven. Let it cool for a few minutes, then add the chocolate chips. Let it continue to sit until cooled completely.

How to Store Granola
Store your homemade granola in an airtight container to maintain its freshness and crispy texture. It can be kept at room temperature for up to two weeks. Since this granola contains chocolate chips, be sure it stays in a cool place so the chocolate doesn’t melt.

- 2 1/2 cups old-fashioned oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey (or agave)
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 325°F. Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the peanut butter, honey, melted coconut oil, vanilla extract and salt.
- Pour the peanut butter mixture over the oats and stir until everything is well coated.
- Spread the granola mixture evenly on a lined baking sheet.
- Bake for 25-30 minutes, or until it begins to brown on the edges.
- Remove from the oven and let cool for 5 minutes, then sprinkle in the chocolate chips.
- Let it cool completely before breaking into clusters.

I love how simple this is! I do believe I’d have a hard time not eating it all.
I absolutely love black coffee and dark chocolate, but I am not crazy about cacoa nibs,, but I’ve only ever had them plain. I will have to try them here.

Great minds…I made a maple, coconut, walnut granola yesterday. Unfortunately, something went wrong with the oven temp and/or my timing, so it’s a tiny bit burnt. Oops!

There is nothing better then chocolate and peanut butter….okay maybe peanut butter and banana….or….well anything with peanut butter is good in my book. I think I need this granola in my life now. Gotta go stock up on some GF oats!
I love cacao nibs! Just…not by themselves. Ive been adding them to everything though – smoothies, oatmeals, cookies, etc. And I love granola so so much, but man I cant keep the stuff in my house. I just eat it non stop!
I’m definitely a dark or bittersweet chocolate person so I will be trying this recipe with cacao. Plus, ever since I saw Fed Up and That Sugar Film… I made dark chocolate brownies this weekend with cacao and they’re so dense and amazing, and only the tiniest bit of sugar 🙂
Yummmm! This is definitely my kind of recipe. I always go straight for the darkest chocolate possible so this is just my kind of recipe.
