Description

This peanut butter cup granola is made with creamy peanut butter and a touch of honey then studded with dark chocolate chips for an irresistible snack! These crunchy clusters are delicious on top of your favorite smoothie or yogurt bowl, or you can enjoy it by the handful.


Ingredients

  • 2 1/2 cups old-fashioned oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey (or agave)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 325°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the peanut butter, honey, melted coconut oil, vanilla extract and salt.
  3. Pour the peanut butter mixture over the oats and stir until everything is well coated.
  4. Spread the granola mixture evenly on a lined baking sheet.
  5. Bake for 25-30 minutes, or until it begins to brown on the edges.
  6. Remove from the oven and let cool for 5 minutes, then sprinkle in the chocolate chips.

  7. Let it cool completely before breaking into clusters.
