These Mediterranean quesadillas are a healthy twist on a classic. Filled with salty feta, creamy mozzarella, and plenty of veggies, these quesadillas are a tasty, healthy meal!  


Units Scale
  • 1 teaspoon olive oil
  • 2 tablespoons chopped fresh tomatoes
  • 2 tablespoons diced red onion
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup baby spinach
  • 1/4 cup crumbled feta cheese
  • 3 oz mozzarella
  • 2 large tortillas


  1. Add the olive oil to a large non-stick skillet and heat over medium heat.
  2. Add the tomatoes, onion, and bell pepper and cook for 3-4 minutes, stirring occasionally.
  3. Add the spinach and garlic and continue to cook for 2 minutes until the spinach is wilted.
  4. Remove the veggies from the pan.
  5. Add half of the veggie mixture onto one half of a tortilla.
  6. Top with half the feta and half the mozzarella then fold the tortilla in half.
  7. Repeat with the remaining tortilla and ingredients.
  8. Cook the quesadillas in the skillet over medium, heat for 3-4 minutes on each side until golden brown.
