Life, Lately
First of all, I’ll give you a little wedding update. Alex and I have been engaged for less than a month and so far we have booked a church, booked a rehearsal venue, met with a day-of coordinator, chosen a photographer, found a DJ, and scheduled a caterer. Oh yeah, and I got a dress and we picked out bridesmaid dresses, and groomsmen apparel. We also ordered, addressed, and mailed out (most of, oops) the save the dates. And last night we had our first marriage counseling session.
Needless to say, it been kind of a whirlwind. But the good kind of whirlwind. It has been a fun process for the most part, so that’s good. And we’ve still be finding time for a quiet cup of coffee together on the weekends.
With all of that going on, my meals have been a little all over the place, so here’s what “What I Ate Wednesday” looks like when life gets crazy.
Breakfast
I am loving toast lately. That sounds boring but its true. Maybe because its warm? I don’t know. I also tend to have some fruit on the side.
Lunch
I’m still trying to pack my lunch when I can. It’s much more difficult when I’m not really cooking. So on those days turn to the salad bar at work. I’m lucky we have these types of delicious options.
Dinner
We’ve been playing a lot of the “lets use up all the random things we have” game which has actually been pretty successful. That’s how the kale salad came about. And then some days I give up as we get pizza. Namely, on Mondays. Every Monday, really. It’s my favorite.

Good for you for being so on top of your wedding planning! In my experience, it’s better to get a lot of it out of the way while you’re super-excited. I got to a point in my planning when I just wanted to be married already and wanted nothing to do with details!
That salad bar meal looks fabulous! If I had that available daily I would likely “forget” my lunch very often. 😉
I was the same way with wedding planning! I actually had my church and venue booked within 3 days of getting engaged. In my defense we were in Michigan and I was already there and decided to knock them out. 🙂

Whoa! Totally missed the part where you got engaged, so… CONGRATS! Sounds like you guys are plowing right through. My planning is moving at a much much slower pace but I think it’s because I’m feeling surprisingly calm about the whole thing. I mean, it’ll come together eventually, no need to get all stressed out about it 🙂
Um, that pizza? Yum! And what an AWESOME workplace to have such a great salad bar. Reminds me of Ruby Tuesdays!
How wonderful that you’ve already figured out so many of the details of the wedding. Definitely a go-getter 🙂 It sounds like things are coming together quite smoothly – I’m sure that helps with any stress of wedding planning. I seriously can’t wait to see pictures of the actual day. You’re going to make a beautiful bride!
