Life, Lately
First of all, I’ll give you a little wedding update. Alex and I have been engaged for less than a month and so far we have booked a church, booked a rehearsal venue, met with a day-of coordinator, chosen a photographer, found a DJ, and scheduled a caterer. Oh yeah, and I got a dress and we picked out bridesmaid dresses, and groomsmen apparel. We also ordered, addressed, and mailed out (most of, oops) the save the dates. And last night we had our first marriage counseling session.
Needless to say, it been kind of a whirlwind. But the good kind of whirlwind. It has been a fun process for the most part, so that’s good. And we’ve still be finding time for a quiet cup of coffee together on the weekends.
With all of that going on, my meals have been a little all over the place, so here’s what “What I Ate Wednesday” looks like when life gets crazy.
Breakfast
I am loving toast lately. That sounds boring but its true. Maybe because its warm? I don’t know. I also tend to have some fruit on the side.
Lunch
I’m still trying to pack my lunch when I can. It’s much more difficult when I’m not really cooking. So on those days turn to the salad bar at work. I’m lucky we have these types of delicious options.
Dinner
We’ve been playing a lot of the “lets use up all the random things we have” game which has actually been pretty successful. That’s how the kale salad came about. And then some days I give up as we get pizza. Namely, on Mondays. Every Monday, really. It’s my favorite.
That pizza look amazing. Congrats on the wedding planning! I teach first grade and I’m wondering will I ever not be busy?!
Again, so impressed with your progress, I think what you’ve done in a month is what I’ve accomplished in this past year of being engaged! Glad you’ve still been taking some time to enjoy it and enjoy each other along the way. Congrats again!

You did all that in one month? I know women who take three months just to find a dress… I’m impressed…
Your salad bar lunch looks great. Easier to fall back on that when it’s reliably a good solid meal… and we all need fall-backs, sometimes.

Good for you getting all of your wedding planning done so fast!! My SIL is doing the same thing. I swear she came over to the house with a full wedding binder the day after she was engaged! I think we all get crazy busy sometimes. I’m not too bad right now but come spring time and baby prep I’ll be going bananas.

Wedding planning is so fun – it’s great that you were able to nail things down already. I was quick to do so too which allowed me to enjoy the engagement period rather than stress for a long time about the details.

seems like the wedding planning is going so well 🙂 good job you guys! I have been struggling a lot with meal planning in advance lately hence its just whatever I can whip in an hour. I really need to change that.
Luckily, life hasn’t been insanely busy for me lately. Salad bar at work this summer was my saving grace, though. It’s really lucky and wonderful to have a great salad bar that didn’t just have cucumbers, tomatoes, lettuce and dressing. Glad to hear the planning is coming along!
