2 Ingredient Brownies

Sometimes I want to make brownies from scratch, like these double chocolate almond flour brownies. But sometimes I just want to make a super simple batch of brownies. That’s where these 2 ingredient brownies come in! By mixing a box of cake mix with a can of pumpkin, you can make delicious, fudgy brownies in no time.
The Brownie Mix for 2 Ingredient Brownies
I’ve tried this recipe with a lot of different types and brands. Betty Crocker’s fudge brownie mix is vegan, so if you wanted to keep this recipe dairy-free, that’s a great option! I’ve also used Trader Joe’s brownie truffle baking mix. The mix should be about 18oz, so just make sure it’s the right size box.
The Best Canned Pumpkin for Brownies
First of all, make sure you buy 100% canned pumpkin, not pumpkin pie mix. Pumpkin pie mix is much sweeter and contains other ingredients. Libby’s pureed pumpkin is a great option, but I’ve also used canned pumpkin from Trader Joe’s and Kroger. The only ingredient should be pumpkin! You’ll need one 15oz can.
How to Make 2 Ingredient Brownies
In a large bowl, combine the brownie mix and one 15oz can of pumpkin puree. You do not need to add any ingredients. The box will say you need to add things like oil and/or eggs, but just ignore this. The batter will be thicker than a typical brownie batter. Line an 8×8 pan with parchment paper and spread the brownie batter into the pan.
Preheat the oven to 350 degrees and bake for 25-30 minutes until a toothpick comes out clean. Let cool, then slice into pieces and enjoy!
Do these brownies taste like pumpkin?
These brownies will have a subtle pumpkin flavor, but it’s not strong. If you want to amplify the pumpkin flavor, add 1 teaspoon of pumpkin pie spice. This will strengthen the flavors of pumpkin to turn these into a tasty fall-themed dessert!

Instructions
- Preheat oven to 350 degrees.
- Spray a 9×9 pan with non-stick spray.
- In a large bowl, combine the brownie mix and pumpkin. It will be very thick.
- Press the batter into the pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
Notes
The box of brownie mix will call for ingredients like oil and eggs but you can skip those. All you need is pumpkin!

That is definitely lazy baking and I love it! I wish we had a TJ’s in Canada because they look fun. I visited one but it was only briefly and I would have loved to spend more time in it.

3 words: cake mix cookies. A box of cake mix, 1/2 cup of oil and 1 egg…and there you have it! These cookies are amazing, believe or not. Healthy? Definitely not. But amazing!

So easy and yet so genius! I love having a trader joes right down the street! And yet, I used to really hate the TJ…. back when I was a whole foods snob (Im from Austin texas, where the first one was built!) but I am coming around!
