Fresh Favorites: Pizza, Projects, & Reusable K Cups
It’s officially summer! Which means I’m trying to stay cool and eat all the summer produce I can find. Gimme the strawberries! I wanted to pop in and give you a quick rundown of some of the things I’m loving right now.
If you’re looking for an easy, healthy summer dessert, look no further than this honeydew sorbet. It’s only 3 ingredients and I promise it’s delicious. I’ve also been so obsessed with these chickpea noodles lately. They’re the best pasta swap I’ve found. I’ve been using the penne noodles in this pasta bake recipe and the elbow noodles are perfect for a healthier macaroni and cheese.
Alex and I finally had a chance to check out Nota Bene and it did not disappoint. If you’re here in Richmond, you’ve gotta try their brick oven pizzas. I’m still trying to convince Alex to build a pizza oven in our backyard but he’s not on board yet. How can I talk him into this? I want us to be the neighborhood pizza-people. (Update: We got a pizza oven!)
Speaking of DIY projects. I’ve been binge-listening to the Young House Love podcast lately. I have to drive to Northern Virginia every week for work, so I’ve made it through all of their archived episodes and now I have to wait for the next one to come out! I love their advice and ideas for home decor and DIY projects because they’re so down to earth and it’s advice I can actually put into practice.
I finally hopped on the cauliflower smoothie train. At first, I was not a fan because even though I have a Vitamix, I could still detect flecks of cauliflower. I found that blending the cauliflower rice with the milk first and then adding the rest of the ingredients seemed to give me the best result. I’m not sure if I’ll make it a regular thing, but I love finding new ways to eat veggies! If you want a really-super-thick smoothie, try these tips.

My dad gave me one of these reusable K-cups and it’s been so handy. If you’re tired of spending money on coffee pods, you’ve gotta get one of these. I just add a scoop of my favorite coffee (lately it’s been Blanchard’s Blend) and pop it in my Keurig. It saves money and it’s a little more eco-friendly than the traditional disposable pods. I’m not ready to give up the disposable pods completely but it’s nice to have another option.

I love that Banza pasta! It works so well in a lot of dishes and I love how much more protein is in it compared to regular pasta.
i have yet to try cauliflower with my smoothie + i dont have a nice blender for that 🙁

I’ve yet to try a cauliflower smoothie! Definitely sounds weird lol. And love the idea of re-usable k-cups. Hate the thought of throwing out cups.
