Cook the quinoa until it’s fluffy, then let it cool slightly. Spread the quinoa into a thin even layer on a baking sheet. Bake the cooked quinoa in the oven until it turns crispy. You don’t need to add any oil to create crispy quinoa. By baking it low and slow, we can remove the moisture, so you’re left with delicious crispy bits of quinoa!

I like the taste of dark chocolate so I used dark chocolate chips that were 60% cacao. If you like sweeter chocolate, try semi-sweet or milk chocolate chips. Add the chips to a microwave-safe bowl and microwave for 1-2 minutes at 50% power, stirring every 30 seconds to ensure the chocolate doesn’t burn.

Ingredients
- 1 bag Success Tri-Color Boil in Bag Quinoa
- 1 cup dark chocolate chips
- 2 tablespoons creamy peanut butter
- Pinch of flaky sea salt
Instructions
- Prepare the quinoa according to package instructions. Once the quinoa is cooked, let it cool slightly.
- Spread the quinoa onto a baking sheet in a thin, even layer.
- Bake at 325 degrees for 10 minutes. Remove the pan from the oven and stir the quinoa to ensure it bakes evenly. Continue to bake for 15 minutes, stirring every 5 minutes, until the quinoa is crispy.
- Allow the quinoa to cool.
- To melt the chocolate, add the chips to a microwave-safe bowl and microwave for 1-2 minutes at 50% power, stirring every 30 seconds to ensure the chocolate doesn’t burn.
- Spread the chocolate into a thin, even layer on top of parchment paper, wax paper, or a silicone baking sheet.
- Drizzle in the peanut butter then top with 1/3 cup of crispy quinoa and sprinkle the bark with salt.
- Freeze for 1-2 hours until firm. Break into pieces and enjoy! Store leftover bark in the freezer.

I love the idea of this recipe but I wish instead of just showing vegetarian recipes you would make them truly healthy like for this recipe use less processed foods like just cook some regular quinoa instead of the more processed boil in bag kind, using natural sweeteners like honey or real maple syrup and using chocolate chips with natural sweetener as well and using natural peanut butter without added sugar such as Adam’s No Stir. Hi Patricia! The quinoa isn’t processed, it’s just pre-rinsed and pre-portioned to save a little time. This recipe doesn’t require any additional sweeteners but you could use any chocolate you like. I’m a bit confused by the instructions. How can I break it into pieces if I’ve dumped the quinoa on top of the melted chocolate mixture in the bowl?
I’m sorry for the confusion, Pamela! You’ll spread the chocolate into a thin layer (make sure it’s on top of parchment paper, wax paper, or a silicone baking sheet so it doesn’t stick!) then stir in the peanut butter and sprinkle the quinoa and salt on top!
