Description

This crispy quinoa bark is a delicious and easy treat! Creamy dark chocolate, swirls of peanut butter, and crispy quinoa create an irresistible dessert that you can keep in your freezer for when your sweet tooth strikes.

  1. Prepare the quinoa according to package instructions. Once the quinoa is cooked, let it cool slightly.
  2. Spread the quinoa onto a baking sheet in a thin, even layer.
  3. Bake at 325 degrees for 10 minutes. Remove the pan from the oven and stir the quinoa to ensure it bakes evenly. Continue to bake for 15 minutes, stirring every 5 minutes, until the quinoa is crispy.
  4. Allow the quinoa to cool.
  5. To melt the chocolate, add the chips to a microwave-safe bowl and microwave for 1-2 minutes at 50% power, stirring every 30 seconds to ensure the chocolate doesn’t burn. 
  6. Spread the chocolate into a thin, even layer on top of parchment paper, wax paper, or a silicone baking sheet.
  7. Drizzle in the peanut butter then top with 1/3 cup of crispy quinoa and sprinkle the bark with salt.
  8. Freeze for 1-2 hours until firm. Break into pieces and enjoy! Store leftover bark in the freezer.
