Almond Butter Chocolate Chip Cookies
These almond butter chocolate chip cookies are made with just a handful of ingredients, but they’re so delicious! Studded with chocolate, these soft cookies are so tasty, you’d never guess they’re vegan!
I almost didn’t get a chance to bake these chocolate chip almond butter cookies because the dough was so yummy that I was tempted to just eat the entire bowl raw. That’s the benefit of vegan cookies… no one can yell at you about raw eggs. (Not that we’d listen anyway, right?)
The Best Almond Butter for Cookies
The base of these cookies is creamy almond butter. Almond butter texture can vary a lot, so I’d recommend using runny, smooth almond butter. The cookies in the photos were made with Whole Foods’ brand of creamy almond butter. I like to use the kind that has no added sweetener or oil, but you can use any type you have on hand.
What is Whole Wheat Pastry Flour?
Whole wheat pastry flour is milled from a different kind of wheat. It’s made from white soft wheat rather than red hard wheat. Don’t let the term “white” confuse you. It is still 100% whole wheat flour. But it has a lower protein content than regular whole wheat flour so it has a much better texture for things like baked goods. I like the Bob’s Red Mill brand. Feel free to substitute all-purpose flour or whole wheat flour, if that’s what you have on hand.
Substitution Ideas
- You can replace the applesauce with 2 tablespoons melted coconut oil
- If you don’t have agave, you can use maple syrup or honey, but keep in mind that honey is not technically vegan.
- I like to use whole wheat pastry flour to make these cookies with whole grains. But you can substitute all-purpose flour, if needed.
Tips for Perfect Cookies
I like to use a cookie scoop so I can make evenly sized cookies. This recipe makes about 12 cookies, but try to avoid crowding the cookie sheet. If you have a large pan, you can bake them all at once. If you’re using a small sheet, you may need to bake them in multiple batches. I like to bake my cookies on a silicone baking mat because I don’t want to worry about them sticking to the pan. If you don’t have a mat, feel free to use parchment paper or a nonstick baking sheet.

Ingredients
- 1/2 cup smooth almond butter
- 1/2 cup maple syrup or agave
- 2 tablespoons applesauce or melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup whole wheat pastry flour or all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips (vegan, if desired)
Instructions
- Move your oven rack to the top-middle position.
- Preheat the oven to 350 degrees.
- Combine the almond butter, maple syrup, applesauce, and vanilla until smooth.
- Stir in whole wheat flour, baking soda, and salt.
- Add in the chocolate chips. The dough will be a bit sticky.
- Drop rounded tablespoons onto a cookie sheet.
- Bake for 9-11 minutes until lightly browned on top.
Notes
