Chickpea cookie dough might sound a little crazy, but if you’ve made my chickpea chocolate chip cookies then you already know that chickpeas are a bit of a magical ingredient!

I almost didn’t share this recipe because it’s really just a variation of my chickpea chocolate chip cookies, without the need for baking. But then I realized some people might be searching specifically for healthy cookie dough recipes, so here we are!

How to Make Chickpea Cookie Dough

The secret to making this healthy cookie dough is to blend the chickpeas so they are completely smooth. It may take 2 or 3 full minutes of blending in a food processor before they’re smooth, but keep going! If it’s lumpy, it’ll throw off your cookie dough texture.

After all that blending, the cookie dough will likely be warm. So let it cool completely before you stir in your chocolate chips, otherwise, they’ll melt! (Trust me, I’ve made this mistake!)

Substitution Ideas

Feel free to substitute honey or agave in place of the maple syrup. (I actually prefer the taste of honey, but I wanted to keep this recipe vegan!)

If you want to cut down on the sugar, you can reduce the amount of maple syrup to taste. You could also try monk fruit or stevia if you like the taste of those types of sweeteners.

You can use almond butter, cashew butter, or even peanut butter. I think almond butter or cashew butter creates the richest, most “cookie dough-like” flavor. But peanut butter works well, too!

How to Store Cookie Dough

Keep the cookie dough in an airtight container in the fridge for up to 6 days. You can also roll it into balls if you want to easily create single serving portions!

Ingredients

  • 1 15oz can chickpeas, rinsed and drained
  • 1/2 cup smooth almond butter or cashew butter, unsalted
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt (or to taste)
  • 1/2 cup almond flour
  • 1/2 cup dark chocolate chips

Instructions

  1. Add the chickpeas and nut butter into a food processor and blend on high for 1 minute.
  2. Add the maple syrup and vanilla and continue to blend for 2-3 minutes, scraping down the sides every minute. You want the mixture to be entirely free of any lumps.
  3. Add the almond flour salt to taste and blend until incorporated.
  4. Let cool completely, then stir in chocolate chips.
  5. Store in the refrigerator in an air-tight container for up to 6 days.
