Do you love to eat cookie dough by the spoonful? Then you’ll love this healthy chickpea cookie dough recipe! It’s easy to make and it will satisfy your cookie dough cravings!


  • 1 15oz can chickpeas, rinsed and drained
  • ½ cup smooth almond butter or cashew butter, unsalted
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla
  • ½ teaspoon salt (or to taste)
  • ½ cup dark chocolate chips


  1. Add the chickpeas and nut butter into a food processor and blend on high for 1 minute.
  2. Add the maple syrup and vanilla and continue to blend for 2-3 minutes, scraping down the sides every minute. You want the mixture to be entirely free of any lumps.
  3. Add salt to taste and blend until incorporated.
  4. Let cool completely, then stir in chocolate chips.
  5. Store in the refrigerator in an air-tight container for up to 6 days.
