What I Ate Yesterday
Happy Wednesday! Like most Wednesdays, I’m sharing a full day of eating! Hopefully, it’ll give you some healthy food inspiration and give you an idea of something new to try. Let’s jump in!
Breakfast was a bowl of vanilla Greek yogurt with some frozen blueberries and a handful of this grain free walnut granola. I love yogurt bowls with lots of texture so this was perfect!
I snacked on some cereal around 10:30. I’m considering it a win that this cereal actually lasted more than a week. Honestly, I’ve eaten entire boxes in just a few days. Does anyone else do that?! I typically can’t even buy cereal. This is the Special K protein kind so it actually does fill me up, unlike most cereals.
I’m not sure why I suddenly went on a lunch-packing kick but I did some meal prep on Sunday so I had lunch packed for Monday, Tuesday, and Wednesday. This was whole wheat couscous with feta, cucumbers, tomatoes, and a herb blend. I had picked up veggies at the farmer’s market on Sunday so the couscous was a nice way to turn it into more of a meal.
My afternoon snack was a little random but I’ve been trying to clean out what’s in the fridge. I had some fresh blueberries and cheddar cheese. (I know, it kind of looks like butter. I promise I’m not buttering my blueberries.) This cheese was so good. I don’t normally think to have cheese as a snack but I’m glad I had it because I think it kept me more satisfied than just fruit.
For dinner, I wanted to try something a little bit different so I made shakshuka, which is a tomato and egg based dish. I’m trying to get myself to like eggs…but it didn’t really work. I liked everything about this except for the eggs so I basically just ate around those. (But if you like eggs, you’d probably really like this!)
After dinner, I painted the sunroom. We painted it a couple of months ago and what was supposed to be a purple-gray turned out straight up purple. It was driving me crazy so I finally painted over it with a real gray. It looks so much better. It was a hassle moving the ladder around a couch, a treadmill, and all my workout supplies, but it was definitely worth it! Once it’s all put back together, I’ll share some pictures!

I love love love this idea…so much of our food blogging time is spent on complicated recipes, when this is how we all really eat!
I adore fried eggs with lots of runny yolk and crispy whites around the outside! Shakshuka is so delicious–I made it once with lots of paprika and toast!
I like eggs scrambled or in omelets, always cooked – maybe try doing them well cooked with ketchup for a diner style meal!
I love eggs and eat them all the time. I make them fried “crispy” which usually amounts to me leaving them frying in the pan until the bottoms burn, They are my go-to when I’m starving and want filling food in under 5 minutes.
If you were buttering your blueberries, I would try not to judge 😉
I went through a phase of several years as an adult when I hated eggs. Out of nowhere, I just started liking them again haha. Maybe you’ll get lucky!
Haha maybe one day I’ll turn a corner and start liking eggs!
Ooh, I’m thinking I’d like that shakshuka. Is that a middle Eastern dish? And my favorite way to eat eggs is probably… an egg burrito?
Everything looks great! Though I must ask – how on earth do you not like eggs?! Those things make up such a huge part of my diet. But I actually used to hate them like 5 years ago, so maybe you’ll grow to love them 😉

I find that when it comes to cereal, I will want it, buy a box, eat the box in a day or two, and then the craving is satisfied and I can go without it for months, I oddly love Grape Nuts, but also cornflakes, Kix and Life cereal.
Oh man I haven’t had Kix in forever! Have you tried peanut butter puffins? Those are my ultimate weakness!
As somebody who hardly eats cheese I’d never thought of eating little chunks as a snack but you make it look intriguing. Buttery ;).
It’s disappointing when colours look differently on the wall than the container. I’m curious to see pictures of your sunroom once it’s done.
Oh and I’ll ship you those many cucumbers then, no? Kidding but we really have way too many.
I always forget cheese as a snack too! Which is so sad, because cheese is oh so good.
I haven’t made shashuska before, but I have no clue why. I love that combination of flavors! My favorite to eat eggs is over easy with hearty toast!
