Tropical Protein Smoothie
I haven’t been doing a great job of getting a lot of protein in lately. My diet has been more carbs + veggies than protein. I decided to switch up my breakfast (which had been toast and fruit) for protein shakes and in an effort to expand my horizons beyond peanut butter and bananas… I’ve been trying some new combinations.
Lately, that’s been tropical.
Frozen mango is one of my favorite snacks, so I almost always have a bag of frozen chunks in the freezer. I’ve tried dried mango, since it’s a little more portable, but in my opinion it’s not nearly as delicious as the frozen kind. That was my inspiration for going tropical.
If you want to get fancy, you can add some fun toppings!
Tropical Mango Smoothie
- 1 cup almond milk (or coconut milk)
- 3/4 cup frozen mango chunks
- 1 scoop vanilla protein powder (I used Designer Whey)
- 1 tbsp shredded, unsweetened coconut
- 2 tbsp walnut pieces (optional)
Blend it up and give it a taste! I didn’t use any sweetener in mine, but depending on the protein powder you use you may need some. Make sure you pick a good protein powder!
Not a bad way to start the day off, right? After a busy day at work, I got to meet up with my friend Eric, who was in town from Texas. We grabbed dinner at The Savory Grain – pear salad for him, kale salad for me. Naturally, we had to celebrate with a little bubbly as well.
I swear we’re not drinking in the middle of the street, it’s just the awkward patio angle. I hadn’t seen him for a month or so, and we had a great time getting caught up on life, wedding plans (me), business ideas (him), and all the little things we had missed! It’s sad when good friends live far away, but it makes catching up feel so special!

Mango and coconut – what’s not to love in this recipe? I brought in some mangoes yesterday and have been thinking up of ways to use them. This smoothie looks like the perfect fit for them.
