Ingredients

  • 24 oz cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • 8 oz whole wheat spaghetti
  • Salt and pepper, to taste
  • Fresh basil and/or grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Spread the halved tomatoes out on a rimmed baking sheet.
  3. Drizzle the olive oil over the tomatoes and gently toss with Italian seasoning and garlic to ensure the tomatoes are evenly coated.
  4. Roast the tomatoes for 20-25 minutes, or until the tomatoes are slightly shriveled and caramelized around the edges.
