- 24 oz cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 2 cloves garlic, minced
- 8 oz whole wheat spaghetti
- Salt and pepper, to taste
- Fresh basil and/or grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400 degrees.
- Spread the halved tomatoes out on a rimmed baking sheet.
- Drizzle the olive oil over the tomatoes and gently toss with Italian seasoning and garlic to ensure the tomatoes are evenly coated.
- Roast the tomatoes for 20-25 minutes, or until the tomatoes are slightly shriveled and caramelized around the edges.
- Bring a large pot of water to a boil.
- Add the pasta and cook according to package directions. Reserve 1/2 cup of pasta water, then drain and set aside.
- Top the pasta with the roasted cherry tomatoes.
