Mini Taco Cups
These mini taco cups are the perfect appetizer made with crispy wonton wrappers, creamy refried beans, and melty cheese. They’re baked until crispy, then topped with salsa, jalapeños, and fresh cilantro for the perfect party snack!

Ingredients & Substitutions
- Wonton Wrappers – These create the crispy base. You’ll usually find them in the refrigerated produce section near tofu. I like the Nasoya brand.
- Refried Beans – A can of refried beans makes this recipe super quick, but you can use homemade if you have some. Be sure to use vegetarian refried beans, as traditional refried beans often contain lard.
- Cheddar Cheese – I like sharp cheddar, but Monterey Jack or a Mexican blend also works great. I’ve also tested this with dairy-free cheese, and that works too.
- Salsa – You can use your favorite store-bought or try my homemade salsa. Chunky salsa adds extra texture.
- Jalapeño – Fresh slices of jalapeño give these a spicy kick! For a milder flavor, use pickled jalapeños or skip them.

Tips & Tricks
- Don’t overfill—about one tablespoon of beans per layer keeps the wontons from tearing.
- To make ahead, bake the cups and store them without toppings. Reheat at 350°F for 5 minutes before serving, then top with salsa and cilantro.
- Want extra flavor? Stir a little taco seasoning into the refried beans before filling.
- Feel free to get creative with the toppings! Try a dollop of sour cream, sliced avocado, or a drizzle of hot sauce.

- 24 wonton wrappers
- 1 (15oz) can vegan refried beans
- 1 cup shredded cheddar cheese or Monterey Jack cheese
- 1/2 cup salsa
- 1 small jalapeño, sliced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F. Lightly spray a 12-cup muffin tin with non-stick spray.
- Press one wonton wrapper into each muffin cup.
- Add a small spoonful of refried beans, then sprinkle with cheese.
- Place a second wonton wrapper on top at a slight angle (like a star shape), then repeat with more beans and cheese.
- Place the muffin tin in the oven and bake for 12-15 minutes, until the edges of the wontons are golden brown and crispy.
- Remove from oven and let cool slightly. Top with salsa, jalapeños, and cilantro.
