Easy Instant Pot Minestrone
This easy Instant Pot Minestrone soup only takes a few minutes to assemble, so you can have dinner ready in no time! This one-pot dish is loaded with fresh vegetables for a healthy, flavorful meal!
Minestrone soup is one of my favorite dinner recipes because it doesn’t require a lot of preparation and it’s an easy way to get lots of vegetables into one meal! Even our 9-year-old foster son loves this recipe. And the best part is, you only have one pot to clean!
How to Make Minestrone in an Instant Pot
This recipe comes together in just a couple of steps. First, you saute the onion, carrot, and garlic until the onion is softened.
Then you add the broth, tomatoes, pasta, zucchini, spices, and beans. Put the lid on and pressure cook for 5 minutes.
The vegetables, pasta, and beans will be perfectly cooked and infused with tons of flavor. I love how easy this recipe is!
Tips for Perfect Instant Pot Minestrone
- Be sure to use high-quality tomatoes. I love Muir Glen or 365 (Whole Foods store brand) tomatoes. I like to use no-salt-added tomatoes so I can control the saltiness of the soup.
- Once the soup is done cooking, quick release the pressure and remove the lid. Turn off the Instant Pot so the pasta doesn’t continue to cook and get soggy.
Substitution Ideas
- Feel free to use red kidney beans instead of cannellini beans.
- You can also add additional vegetables like chopped green beans or chopped broccoli. Simply add them to the pot when you’re adding the zucchini and pasta.
- I like to use ditalini pasta which is a small, tube-shaped pasta. You can use any small pasta shape such as macaroni or small shells.
Minestrone Soup Topping Ideas
- If you like spicy flavors, try adding additional crushed red pepper flakes.
- You can also add a sprinkle of freshly grated Parmesan cheese just before serving.
- For a different twist, try adding a swirl of pesto into each bowl!

Ingredients
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 2 large carrots, peeled and diced
- 2 cloves garlic, minced
- 28oz can diced tomato
- 6 cups vegetable broth
- 1/2 teaspoon oregano
- ¼ teaspoon red pepper flakes
- 1 small zucchini, sliced into half-moons
- 1 15oz can cannellini beans, drained and rinsed
- 8 oz ditalini pasta
Instructions
- Set the Instant Pot to saute and add olive oil, onion, and carrot.
- Saute for 4 minutes, stirring frequently.
- Add garlic and continue to saute for 1 minute.
- Add tomatoes, broth, oregano, red pepper flakes, zucchini, beans, and pasta.
- Set Instant Pot to “Manual” for 4 minutes.
- Quick-release pressure, then turn off Instant Pot and serve immediately.
How to Store Leftover Minestrone Soup
Store leftover soup in an airtight container in the fridge for up to 4 days or in the freezer for up to 1 month. To warm frozen soup, reheat in the microwave or on the stovetop.

Very good! I added a couple tablespoons of tomato paste while sautéing, a couple bay leaves while pressure cooking and some extra seasoning per my taste. I didn’t have cannelini beans so I used great northern beans and they worked just fine. Thank you for this recipe!
