I’m so excited to share another easy and healthy recipe with you in partnership with Patient First! This cottage cheese breakfast bake is perfect for the busy back-to-school season. You just dump everything in the pan and bake until set. It’s a great option for meal prep and an easy way to sneak some greens into your breakfast routine!

Ingredients & Substitutions

  • Eggs – This is the base of the breakfast bake. I used 6 large eggs for the perfect fluffy texture.
  • Cottage cheese – This adds creaminess and a boost of protein. I recommend full-fat for best flavor, but you can use 2% if that’s what you have.
  • Milk – I used 2% dairy milk, but almond milk works great too!
  • Feta cheese – This adds a deliciously salty flavor. You can substitute with goat cheese or shredded cheddar, if that’s what you prefer.
  • Baby spinach – A few handfuls of spinach are a great way to sneak in veggies. Chopped kale could also be used, just be sure to remove the stems.
  • Salt & pepper – Keep it simple with seasoning, or try adding a pinch of garlic powder or smoked paprika.

Here are some fun ways to customize your egg bake:

  • Add chopped sun-dried tomatoes or roasted red peppers for a Mediterranean flavor.
  • Swap the feta for shredded pepper jack cheese to add a spicy flavor.

Description

Ingredients

  • 6 large eggs
  • 8 oz full-fat cottage cheese
  • 1/2 cup milk (dairy or almond milk)
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup baby spinach, torn

  • Cooking spray or oil (for greasing)

Instructions

  1. Preheat oven to 375°F. Lightly grease an 8×8 glass baking dish by spraying it with non-stick spray.
  2. Add eggs and cottage cheese to the dish. Whisk until mostly combined.
  3. Add milk, feta, spinach, salt, and pepper. Whisk again to combine.
  4. Bake uncovered for 35–40 minutes or until a toothpick inserted in the center comes out clean.

  5. Let cool for 10 minutes before slicing into squares. Enjoy!
