Boursin Baked Gnocchi

As a busy mom, I love dump-and-bake recipes because they require almost no prep, meaning I can get a delicious dinner in the oven in just a few minutes. This recipe is a twist on the viral feta pasta, made even easier with gnocchi, so thereโs no boiling required. The herby cheese adds a creamy flavor to the sauce and the tomatoes and spinach ensure that weโre getting plenty of veggies in every bite!

Ingredients and Substitutions
- Gnocchi– Youโll need 1lb of shelf-stable gnocchi. I prefer the shelf-stable kind over the frozen kind.
- Olive oil- A drizzle of olive oil helps the gnocchi get crispy.
- Boursin– This creamy cheese comes in a few different flavors. I like the garlic and herb flavor for this recipe, but any kind will work. Alouette is another brand that makes a similar type of cheese, which can be used here as well.
- Tomatoes– I used a variety of cherry tomatoes, but grape tomatoes can also be used. Tomatoes contain high levels of vitamins A and C, as well as lycopene.
- Spinach– I like to add a few handfuls of baby spinach for extra nutrients.
- Marinara sauce– You can use any kind of pasta sauce you like!
- Italian seasoning– A sprinkle of Italian seasoning helps enhance the flavors.
What is Boursin?
Boursin cheese is technically a Gournay cheese, mixed with herbs and spices. Boursin is the brand that popularized this creamy, crumbly cheese made from cowโs milk. So Boursin isnโt really a type of cheese, itโs a brand that makes a variety of this type of cheese. Alouette is another brand that makes a similar type of cheese, and that can be used here as well. I recommend using the garlic and herb cheese, which has the perfect flavor profile for this creamy baked pasta dish. They recently created a dairy-free version of this popular cheese, so if you want to make it without dairy, look for this cheese! Iโve seen it at Trader Joeโs and itโs pretty affordable.

How to Store Leftovers
If you have leftovers, store them in the fridge for up to 3 days. This dish is best served right away, but leftovers can be reheated in the microwave. If youโre reheating leftovers, drizzle a little olive oil on top and reheat at 50% power, stirring every minute until heated through.
What to Serve with This Dish
This dish is quite filling on its own but if you want to pair it with a side dish, I love it served with this garlicky white beans! Itโs a great way to add a little extra fiber and protein to the dish. Ingredients
- 16oz shelf-stable gnocchi
- 2 tablespoons olive oil
- 8 oz Boursin cheese
- 24oz cherry tomatoes
- 1 cup baby spinach, torn into pieces
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- Salt & black pepper, to taste
- Chopped basil and parmesan cheese
Instructions
- Preheat your oven to 425 degrees.ย
- Line a baking sheet with parchment paper and spread the gnocchi into a single layer. Drizzle with 1 tablespoon olive oil and gently stir to ensure the gnocchi is evenly coated.
- In a 9ร13 baking dish, place the Boursin cheese in the center. Add the cherry tomatoes around the cheese.
- Top the tomatoes with spinach, then cover with marinara sauce and season with Italian seasoning, salt, and black pepper. Stir gently, keeping the cheese intact, but ensuring the spinach is submerged in the sauce.
- Bake the gnocchi on the bottom rack of the oven and the Boursin pan on the top rack uncovered for 30 minutes, or until the tomatoes are bursting, the cheese is soft, and the gnocchi is crispy.
- Add the crispy gnocchi to the pan with the tomatoes and stir until everything is combined.
