- 16oz shelf-stable gnocchi
- 2 tablespoons olive oil
- 8 oz Boursin cheese
- 24oz cherry tomatoes
- 1 cup baby spinach, torn into pieces
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- Salt & black pepper, to taste
- Chopped basil and parmesan cheese
Instructions
- Preheat your oven to 425 degrees.
- Line a baking sheet with parchment paper and spread the gnocchi into a single layer. Drizzle with 1 tablespoon olive oil and gently stir to ensure the gnocchi is evenly coated.
- In a 9×13 baking dish, place the Boursin cheese in the center. Add the cherry tomatoes around the cheese.
- Top the tomatoes with spinach, then cover with marinara sauce and season with Italian seasoning, salt, and black pepper. Stir gently, keeping the cheese intact, but ensuring the spinach is submerged in the sauce.
- Bake the gnocchi on the bottom rack of the oven and the Boursin pan on the top rack uncovered for 30 minutes, or until the tomatoes are bursting, the cheese is soft, and the gnocchi is crispy.
- Add the crispy gnocchi to the pan with the tomatoes and stir until everything is combined.
