Samoa Cookie Granola
If you find yourself dreaming of Girl Scout Cookies, try this Samoa Cookie Granola! Toasted coconut, sweet caramel and chocolate, and crunchy oats will satisfy your cookie cravings!
When it comes to Girl Scout Cookies, I love Samoas! I’m normally not a big fan of caramel but I can’t resist the coconut and chocolate combination. I decided to throw all of those flavors into a crunch homemade granola and I’m thrilled with how it turned out!
How to Make Homemade Caramel Sauce
For this recipe, you can use a simple homemade caramel sauce using dates and water. Simply blend 6 pitted Medjool dates with 2/3 cup of water until smooth. If you do not have a high powered blender, I recommend soaking the dates in the warm water for 5 minutes before blending. The mixture does not have to be completely smooth.
The Best Storebought Caramel Sauce for Samoa Cookie Granola
I’ve also made this granola with Trader Joe’s caramel sauce and Mrs. Richardson’s caramel topping. Both are perfect! It adds a nice sweetness to the granola and it coats the oats well to make this granola crunchy with big clusters. Most caramel sauce is vegan and gluten-free but be sure to check the ingredients if you’re allergic!
Substitution Ideas
- I like using mini chocolate chips so you get a little bit of chocolate in each bite. But if you want to use regular chocolate chips, just chop them up a bit before adding into the granola.
- I used rolled old fashioned oats. Be sure not to use instant oats. You can use gluten-free oats if needed.

Description
If you find yourself dreaming of Girl Scout Cookies, try this Samoa Cookie Granola! Toasted coconut, sweet caramel and chocolate, and crunchy oats will satisfy your cookie cravings!
Ingredients
- 6 Medjool dates, pitted + 1/2 cup warm water (or 1/3 cup caramel sauce)
- 1 cup whole grain rolled oats
- 1/2 cup coconut flakes (unsweetened)
- Pinch of salt
- 1/4 cup mini chocolate chips
Instructions
- Preheat the oven to 300 degrees.
- Place the dates and warm water in a blender or food processor and blend until smooth.
- In a bowl, combine the oats and coconut flakes, then mix with the date paste until evenly mixed.
- Line a baking sheet with parchment paper and spread the granola into an even layer.
- Sprinkle the granola with salt.
- Bake for 10 minutes, stirring halfway through to ensure it doesn’t burn.
- Check after 10 minutes, but the granola may need an additional 5 minutes, depending on how thin it is spread on the pan. Watch it closely so it doesn’t burn!
- The granola will be soft when removed from the oven, but it will firm up after it cools.
- Once the granola comes out of the oven, let it cool for about 2 minutes, and then add the chocolate chips while it’s still warm. Do not stir.
- Let the granola cool completely before transferring to an air tight container.
Notes
You can substitute 1/3 cup of store-bought caramel sauce for the homemade date paste if desired.
Store this granola in an airtight container for up to 1 week. But I can pretty much guarantee it won’t last that long because it’s so delicious!

What is your favorite type of Girl Scout Cookie?
First off, I can’t believe that you’ve never had a Samoa before – no seafood and no Samoas? You were deprived as a child. 😉
I want this granola, but I probably shouldn’t make it because I have no portion control when it comes to granola, especially when chocolate is involved.
My favorite Girl Scout Cookies are Thin Mints and then Samoas.
If I make another batch (which I inevitably will, I’ll save you a little portion!!!)
thin mints all the way!!!
samoa cookies would be next though as we love coconut
I was s girl scout from 1st to 12th grade do I’ve sold and have eaten lots of girl scout cookies!! My favorite is the pb patties a.k.a. tagalogs because I’m a pb addict! Selling all my cookies took me tons of places and even help with scholarship money in college. 🙂
You’re a seasoned pro!!!! Maybe I’ll have to make a granola based on tagalongs next 🙂 I’ve never had that kind, but I LOVE peanut butter, so I’m sure I’d like them!
I bet the coaching is such good fun, bless them! And if it inspires jawdroppingly droolworthy recipes like this, it’s a no-brain winner! This I have to make 🙂
Oh YUM, you did not disappoint! The recipe sounds just as amazing as the it did in the teaser 🙂 Hmm, I used to be a girl scout, and I still can’t remember the flavors or which was my favorite. I didn’t like chocolate as a kid (but oh, I learned the error of my ways!), so I think the plain shortbread cookies were my favorite. There was also a lemon option (but not the same lemon ones they sell now, apparently), that I really liked.
Mmm. Samoas are most definitely my favorite. Anything with coconut and chocolate is a hit!
That is my absolute favorite girl scout cookie!!
WAIT. Is the caramel sauce from TJs vegan?!?!? I have been wanting to make vegan caramel, but if that already is, I’ll let the Trader handle it.
Proposition: Can we have a granola swap?
I’m pretty sure I lied and that caramel sauce is NOT vegan. But after making it, I looked at a different caramel sauce that WAS vegan. I’ll have to remember which brand had the vegan kind and I’ll send you the info!!
But I did update my post so as not to be super confusing!
Yum that sounds so rich and yummy! We don’t get girl scouts cookies this side of the pond which is probably a good thing!
Oh sweet baby jesus, I want some of this!
