Description

If you find yourself dreaming of Girl Scout Cookies, try this Samoa Cookie Granola! Toasted coconut, sweet caramel and chocolate, and crunchy oats will satisfy your cookie cravings!


Ingredients

  • 6 Medjool dates, pitted + 1/2 cup warm water (or 1/3 cup caramel sauce)
  • 1 cup whole grain rolled oats
  • 1/2 cup coconut flakes (unsweetened)
  • Pinch of salt
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat the oven to 300 degrees.
  2. Place the dates and warm water in a blender or food processor and blend until smooth.
  3. In a bowl, combine the oats and coconut flakes, then mix with the date paste until evenly mixed.
  4. Line a baking sheet with parchment paper and spread the granola into an even layer.
  5. Sprinkle the granola with salt.
  6. Bake for 10 minutes, stirring halfway through to ensure it doesn’t burn.
  7. Check after 10 minutes, but the granola may need an additional 5 minutes, depending on how thin it is spread on the pan. Watch it closely so it doesn’t burn!
  8. The granola will be soft when removed from the oven, but it will firm up after it cools.
  9. Once the granola comes out of the oven, let it cool for about 2 minutes, and then add the chocolate chips while it’s still warm. Do not stir.
  10. Let the granola cool completely before transferring to an air tight container.

Notes

You can substitute 1/3 cup of store-bought caramel sauce for the homemade date paste if desired.
