When it comes to Girl Scout Cookies, I love Samoas! I’m normally not a big fan of caramel but I can’t resist the coconut and chocolate combination. I decided to throw all of those flavors into a crunch homemade granola and I’m thrilled with how it turned out!
How to Make Homemade Caramel Sauce
For this recipe, you can use a simple homemade caramel sauce using dates and water. Simply blend 6 pitted Medjool dates with 2/3 cup of water until smooth. If you do not have a high powered blender, I recommend soaking the dates in the warm water for 5 minutes before blending. The mixture does not have to be completely smooth.
The Best Storebought Caramel Sauce for Samoa Cookie Granola
I’ve also made this granola with Trader Joe’s caramel sauce and Mrs. Richardson’s caramel topping. Both are perfect! It adds a nice sweetness to the granola and it coats the oats well to make this granola crunchy with big clusters. Most caramel sauce is vegan and gluten-free but be sure to check the ingredients if you’re allergic!
Substitution Ideas
- I like using mini chocolate chips so you get a little bit of chocolate in each bite. But if you want to use regular chocolate chips, just chop them up a bit before adding into the granola.
- I used rolled old fashioned oats. Be sure not to use instant oats. You can use gluten-free oats if needed.

Ingredients
- 6 Medjool dates, pitted + 1/2 cup warm water (or 1/3 cup caramel sauce)
- 1 cup whole grain rolled oats
- 1/2 cup coconut flakes (unsweetened)
- Pinch of salt
- 1/4 cup mini chocolate chips
Instructions
- Preheat the oven to 300 degrees.
- Place the dates and warm water in a blender or food processor and blend until smooth.
- In a bowl, combine the oats and coconut flakes, then mix with the date paste until evenly mixed.
- Line a baking sheet with parchment paper and spread the granola into an even layer.
- Sprinkle the granola with salt.
- Bake for 10 minutes, stirring halfway through to ensure it doesn’t burn.
- Check after 10 minutes, but the granola may need an additional 5 minutes, depending on how thin it is spread on the pan. Watch it closely so it doesn’t burn!
- The granola will be soft when removed from the oven, but it will firm up after it cools.
- Once the granola comes out of the oven, let it cool for about 2 minutes, and then add the chocolate chips while it’s still warm. Do not stir.
- Let the granola cool completely before transferring to an air tight container.
Notes
You can substitute 1/3 cup of store-bought caramel sauce for the homemade date paste if desired.

Store this granola in an airtight container for up to 1 week. But I can pretty much guarantee it won’t last that long because it’s so delicious!

I’m not sure if I’ve ever had the samoas, bu my favorite was always the thin mints and the peanut butter ones.. I haven’t had either in years, which is a good thing b/c I def. don’t have any sense of portion control with GS cookies!

Looks good! I used to like the little butter cookies that had sugar on top – I don’t think they make them anymore. My niece knows I’ll buy the boxes of cookies but she keeps them or give them out to her class!
