The Best Bagel Sandwich
The weekend is almost here and I have the perfect lazy-Saturday-morning breakfast for you. It could also be a weekday breakfast. Or a Sunday brunch recipe. Or a Wednesday-last-minute-dinner-idea. Just saying.
Alex and I have a favorite breakfast spot, which I’ve talked about a lot on the blog. Lamplighter has a few locations around Richmond but the one on Addison St. is obviously the best one.
Their coffee is great but their bagel sandwiches, that’s where it’s at.
We can’t go as often as I’d like to (because let’s be honest, I’d like to go everyday… and the hipster coffee + bagels aren’t cheap) so I decided to try my hand at recreating this at home.
My go-to order at Lamplighter is the “Katie” sandwich. If you ever go to Lamplighter, you must order it, and tell them I sent you. (Just kidding. If you tell them, they won’t know who you’re talking about.) But if you’re not in Richmond… then make this. RIGHT NOW.
I’m not even going to give you a real recipe, I’ll just give you a grocery list:

Description
This easy combination makes the very best bagel sandwich!
Ingredients
- Â Â 1 everything bagel (check the ingredients if you want to keep this vegan)
- Â Â 4 avocado slices
- Â Â 2 tbsp hummus (I like garlic or pine nut hummus)
- Â Â 1 tbsp diced red onion
- Â Â Handful of spinach
- Â Â 2 slices of tomato (if it’s in season, otherwise I skip it)
Instructions
- Slice and toast the bagel.
- Spread hummus on one side of the bagel.
- Slice the avocado into thin slices and arrange the slices over the hummus.
- Top with red onions, spinach, and tomatoes.
- Place the other half of the bagel on top and dig in!
Notes
Some bagels are vegan and some have an egg wash or honey. The everything bagels at Panera are vegan and you can also find vegan bagels at the grocery store. Trader Joe’s, Thomas, Food for Life, and most Sara Lee bagels are vegan.
Slice and toast your bagel, then add all the toppings. Dig in! The hummus + avocado combo is ah-maze-ing. I might have to just whip that into a sandwich spread and eat it on everything because it’s so tasty. But first, have it on an everything bagel. I don’t know what spices are on an everything bagel but the everything must mean everything magical.
I could definitely eat this every day and be a happy girl.

I eat things similar to this whenever I have the right stuff on hand! If I’m at home [or going to one of my favorite local bagel places…the St. Paul Bagelry, next time you’re in MN, has an “Al Green” which I get with hummus instead of cheese…it’s basically this but with an egg! 🙂 ], I’ll put an egg on it as well…egg + hummus = surprisingly delicious combo. And the veggies are essential, of course.
Ahh, this makes me miss everything bagels SO much!!

We eat the same thing every Sunday morning in NYC at a place down the street from us. It is our routine for three years now except when we r traveling. It is made on an organic homemade ancient grain hero with hummus, romaine and green leaf lettuces, alfalfa sprouts, shredded red cabbage and shredded carrots, tomatoes and avocado or goat or alpine lace Swiss and cheddar cheeses. We each eat half because it is a massive rainbow of colors, flavors and deliciousness. However, so light you feel digested in a few hours. It is just tons of natures luscious beauties.
