What I Ate: Sunday
I mentioned in last week’s post that I’m trying to focus on balance over the holiday season. For me, in terms of food, that means enjoying the things I love, squeezing in veggies where I can, and passing on the things I don’t love. I’ve been trying to keep sweet treats to once a day (which is actually difficult when you work in an office) and cutting out boredom-snacking. My meals aren’t “perfect” though. Some days, I count cheese as dinner. 😉 Here’s what Sunday looked like:
I’ve been sticking with my standard Greek yogurt + berries + granola. Specifically, this was the “cherry berry” blend from Trader Joe’s, topped with this grain free granola.
After breakfast I went to gymnastics for a nice workout and by the time I came home, it was almost 2:00 and I was ravenous. I wanted something quick, filling, and healthy. Freezer meals to the rescue!
I had a bag of cheese ravioli leftover from a casserole recipe so I boiled the rest of it. I picked it up from Kroger on a whim but I ended up really liking it. It had a nice flavor for a frozen ravioli! The salad was kale + the Trader Joe’s chopped veggies mix, topped with a homemade garlic tahini dressing.
The afternoon flew by and after heading to church, I went to a friends house for our monthly cooking club. Although, as I mentioned on Sunday, this cooking club was really more of a wine night. Dinner consisted of wine, cheese, & crackers.
I planned on eating a “real” dinner when I got home but I ended up feeling pretty full after all the cheese and crackers! So rather than a real dinner, I had a brownie. That counts, right?
I can’t wait to share the recipe with you all! You’ll never guess the secret ingredient! (Nope, it’s not black beans!)
What’s the best thing you ate yesterday?
I’m linking up with What I Ate Wednesday!
Hmm. I’m curious about the secret ingredient in the brownies – that isn’t black beans…
Uhm. I’d be lying if I said I haven’t had a brownie for dinner before. Sorry I’m not sorry.
This all looks so tasty! I really need to work on getting more creative with my leftovers like this.
Is the secret ingredient in the brownies avocado? That seems to be a popular trend nowadays!
Nope! Not avocado either!! 🙂
Sometimes wine, cheese, and crackers are just the perfect dinner! It can be really delicious! 🙂
Brownies for dinner? Oh Im all aboard that train! Can’t wait for the recipe girlie!
This time of year my dinners often consist of nibbling here and there since so many holiday parties are after work from around 6-9pm, meaning it is far too late for dinner by the time you’re through!
Exactly! Party food totally counts!
A girl after my own heart. Cheese, crackers, and wine definitely counts as dinner!
Best thing I ate yesterday was dinner- Riley made us fajitas that were really tasty.
Yum!! I had some fajitas on Friday and they were sooo good!
Cheese and crackers sounds legit to me. I think I’d have multiple time a week if my husband wasn’t hungry too. 😉
I love brownies, so I can’t wait to see that recipe!
I love that you just had a brownie instead. I feel like the holidays is all about making adjustments to whatever is going on. It sounds like you’ve had an enjoyable few days which is all that matters right?
