Food Journaling Part 4

I’m into the 4th week of the Get Well Challenge, and food journaling has started to become a habit. It helps that I have the Livestrong app on my phone so I can pretty much do it from anywhere. I’ve also been into a pretty decent routine lately, so that’s helped as well!

Here’s what I’ve been eating…

Breakfast

Banana Smoothie with Honey Roasted Peanut Butter

Total: 325 calories, 25g protein, 5g fiber

Lunch

My brother and I had a lunch date at Chipotle which I love. My bowl is relatively low in calories but keeps me full through the afternoon. I filled it with lettuce, black beans, vegetables, corn salsa, tomato salsa, and guacamole.

That whole bowl came at less than 400 calories, and I had a few handfuls of my brother’s chips for another 150 calories.

Total: 527 calories, 16g protein, 22g fiber

Afternoon snack

I love crunchy snacks, so I had some sugar snap peas with a handful of roasted soybeans while finishing up at work. Soybeans pack in lots of protein for less calories than other nuts. I love the salty crunch! When I got home, I also grabbed a handful of crackers.

Workout

I was feeling really unmotivated. I just didn’t feel like running. Luckily, Brittany texted me and asked if I wanted to go for a run, so that was the perfect way to get myself out the door! We knocked out about 3 miles and ran at a pretty good pace so I was happy about that!

Total calories burned: ~300 calories

Dinner

Today was such a perfect fall day, I knew I needed to make a pot of vegetarian chili. I hadn’t made it in months and this is one of my favorite dinners when the weather gets cold! It’s also great leftovers to pack for lunch. I used a version of this recipe and recycled the picture. So no cornbread was served on the side, although that would have been quite delicious.

Total: 480 calories, 16g protein, 14g fiber

I absolutely love this dinner and I’ll probably start making it at least once a week. It’s so simple, so cheap, and so healthy! It doesn’t get any better than that. Oh and it’s vegan and gluten free, in case you’re into that.

Also, thats 72g of protein for the day… in case you’re counting. Take that “vegetarians-don’t-get-enough-protein” people.

  5. I’m a big soup person so I do that, in fact making some chicken soup for my sick hubby is on the agenda today while also making myself a veggie version. Should be fun! I love chili too and have a great veggie recipe. Keep saying I need to make it. I bought a new bigger crock pot just for that purpose! I’ve never tried it in the crock pot, but what the heck! I love the recipe because it makes a lot and gives me leftovers to freeze for a quick dinner. Also it’s something that Ralph and I can both eat!

  6. Chilli is the ultimate winter comfort food! I love anything tomato-based when it starts getting cold outside, and I am sure you will agree that there’s nothing like the classic combo of tomato soup with a grilled cheese :) !

  7. I have to agree with everyone else! Nothing says comfort like a bowl of chili. I am looking for a good veggie chili recipe so I will give this a try. I love Chipotle and when I go there I always get the bowl with brown rice, and all the veggies. And for some reason I can always make two meals out of it… which works great!

  14. That chili looks amazing – soups and stews are my go-to foods when it starts getting cool out, and this one looks fantastic. I also lurve the veggie bowls from Chipotle…and oh, is their guac ever amazing. :) Happy WIAW!

  15. I am in love with any and all soups lately. Sometimes I even feel like just a big bowl of broth would be delicious. I must be needing some sort of soul-nourishing comfort in my life or something. :)

  18. Mmm Chipotle. I really wish that we had one up here :( As for warm dinners, I think a good hearty soup is probably my favorite. I do love chili, but the beans just don’t agree with me.

  23. Lately I’ve been loving curry as a mix up for chili. It’s still spicy and warm and comforting! I posted a good veggie curry recipe a few weeks ago, you should check it out!

  24. Chili is definitely a good cold weather food! I love soup with fresh bread as well! Your honey-roasted peanut butter sounds heavenly…I’ll definitely have to give it a go! :-)

  26. Chili is always welcome no matter the weather! I think Indian food is very comforting and “warm” – probably because of all the spices.

    Once the weather cools off, I switch full gear to soups and chilis too. Nothing beats a warm bowl of love on a cold day.

  29. Yay – so glad we went on that run yesterday. The weather is way too nice not to enjoy it! Isaac made vegetarian chili last Sunday and I’ve been eating it all week sprinkled with a little nutritional yeast! It’s one of my favorite fall foods. I also really like curried pumpkin soup.

  31. Wow! I give you props for having kept track for four weeks! That takes discipline – something I have yet to find apparently! I keep wanting to track my meals but I will 1) forget to update my log 2) feel bad about something ‘not so good for me’ and not log 3) switch between tangible log and phone log and it becomes confusing. Any tips? :)

  34. My biggest diet vice is eating too much sugar so I should definitely do a food diary, although it might prove a bit of a shock!
    Your swirly smoothie looks lovely, as does the chilli… my favourite autumn dinner is garlic-roasted vegetables with goats’ cheese on top, delicious :-)

    I like making soups and stews during Fall/Winter weekends and then having on hand for the week.

  36. Good for you keeping track of everything. :) It gets easier. ha Guess I have a good bit of experience on that.

    I love cooking chili in the cooler months, so I’m right there with ya on that one.

  38. Do you feel like you end up eating more or less from counting calories? i.e.- I’m low for the day, I should eat more (even if you might not have had you not counted) or the opposite. Just cuious. Otherwise, your eats look fab!!

    • I did noticed myself doing that on days where I was doing long runs (because I was burning so many calories!) So I’ve gotten better at not being so exact with my target. Some days I’ll go over and somedays I’ll go under, but I try to listen to my hunger cues!

  39. Soup and paninis is for sure my go-to cold weather food! But usually I am not as awesome as you are making it from scratch :) LOVE the Chipotle Bowl, especially the HUGE glob of guacamole they give you. Chipotle knows whats up!

  40. I get the exact same Chipotle bowl except with chicken instead of black beans. I love it! I feel sorry for people who don’t have Chipotle where they live!

  42. Wow all that protein! I am impressed, as you say in the face to all that say you don’t get enough. People who are normal probably get complacent themselves and don’t get enough!

  43. When I say normal I mean meat eaters and didn’t mean for it to sound bad!! I just know my ex boyfriend did not eat enough protein. that sounded a bit dodge when I reread it….Its getting late I should probably sleep zzzzz lol

  44. Wow. So many comments! And great job with the protein. Let me say that I love Chipotle, so kudos there. Oh, and I haven’t had chili in forever, but I have been wanting to try pumpkin chili ever since I found out about my allergy to tomatoes… Ever tried it?

  46. Now, that’s an interesting pursuit to journal protein intake. I’m training for a bikini competition right now and I’m eating at least my body weight in grams of protein and it’s NOT easy.

    Perhaps I’ll try this!

    FYI: That shake looks amazing. As long as it doesn’t taste like grass, I want one.
