Summer Favorites

I don’t know about you, but to me, Labor Day fees like the official end of summer.

I’m not sure where it went, but I must say, it’s been full of adventures with great friends, so what more can you ask for?

Maybe a few delicious recipes as well…

So to commemorate the end of summer, here are some of my favorite recipes of the season! Grab the last of your summer produce, and pack up some of these ideas for a cookout or barbecue, and savor it, before pumpkin recipes take over the internet 😉

The perfect way to use up a bunch of fresh vegetables! Toss them in with some whole wheat pasta.

Got lots of greens to use up? Toss them with some trail mix and balsamic vinegar!

This could be a side dish, but I’ve been known to toss it with some quinoa and call it dinner.

    my favourite summer dish.. aww green smoothies and a huge green leavy salad with quinoa, edamame, parsley and sesame plus a tahini dressing. yum!

  2. Ohh yummy recipes! I have quinoa and avocado which need to be used up so I am pretty sure I’ll be making the last recipe rather soon! One of my favorite summer recipes is a watermelon & feta salad with basil, sprouts, olive oil & balsamic- YUM!

  3. These are all great recipes, there is nothing like a good three ingredient salad. Perfect for summer days when you don’t want to spend all day in the kitchen 🙂 I’m not sure what my favourite summer RECIPE is at the moment, but I sure am loving all the fresh summer foods like watermelon and strawberries 🙂

  5. I miss summer already! Fave summer dish: sliced sweet tomatoes, topped with a little creamy goat cheese & basil, then drizzled in balsamic & olive oil. YUUUUUUM. Hey, have you expanded your goat cheese horizons yet? 😉

  6. Labor day long weekend always feels like the end of summer to me as well… especially because kids start going back to school tomorrow! But I have to agree that this summer has been a good one 🙂 I’d have to say, though, that my favorite summer eats aren’t really recipes… they’re just really simple and quick foods. Things like fresh fruit (watermelon and blueberries oh.em.gee!), grilled veggies/chicken, iced coffee, big salads… just simple and cool 🙂

  9. Oh goodness me – the black bean n’ avocado salad. I’d go all over that with life’s delights: corn & salt. Find me some tortilla chips or a giant corn tortilla, woooo! Thanks for the delicious recipe 🙂 My favorite this summer has been (not so hot-house friendly) lentil burgers & sweet tater fries. My hubby and I went for those every weekend this Summer – and my freezer is stocked all time with homemade patties n’ Ezekiel buns. So divine!

  16. My favorite summer recipes are anything with tomato! I refuse to ever buy a nasty winter tomato from the grocery store, so I have to get my fill while I can. And maybe roast a few to go with pasta 🙂

  21. Ooh!! Black bean and avocado salad sounds wonderful! I’ve been eating so much beans lately I feel like a legume ;). Although I like my refreshing summer eats, I’m ready for fall! Bring on the pumpkin, squash, apples…I can’t wait to enjoy my soup without melting in the heat 😉
