Almost every Thursday, a group of my friends get together for a potluck, some of which are themed, some of which are just a random assortment of goodies. As a vegetarian, I usually try to bring some sort of “main dish” that’s meat free.
But last week, I was feeling sneaky.
I wanted to bring a dish that wasn’t “great for a healthy vegetarian” but something that was delicious.
And lucky for me, the nice people at LightLife sent me coupons for some free goodies!
For this recipe, I used the LightLife Mexican style soy crumbles:
And I whipped this into…
Secret Vegan Chili Dip
- 1 packages of Mexican style soy crumbles
- 1 24oz can of crushed tomatoes
- 1 tbsp lime juice
- 2 tbsp nutritional yeast
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp crushed red peppers
- Splash of Tobascco sauce
- 3 drops of liquid smoke
The great thing about the soy crumbles is, you don’t have to worry about making sure it gets cooked. You can just toss all these ingredients into a pot and let it simmer for 10-15 minutes.
Make sure you stir it while it’s heating, so it doesn’t burn on the bottom. You don’t have to serve it warm, but it’s simple to reheat it in the microwave if you need it! Serve with a bag of tortilla chips, and you’re ready to go!
Everyone loved the dip! I didn’t mention that it wasn’t beef (and I also didn’t mention it had nutritional yeast in there… if people haven’t tried it, they tend to get a little weirded out by it). I’d call that, success

haha I’ve totally snuck tofu and lentils in meals and then fed them to my unsuspecting husband =) If he doesn’t know, he’s more likely to honestly tell me he likes it

I’ve been wanting to try their products! I am a vegetarian, but even yrs ago I still didn’t eat much meat. I remember one time in college I was home and decided to make chili. I didn’t tell my family I used Boca crumbles. We ate it and enjoyed it.

I don’t usually sneak in healthy ingredients (I should do that more often) but I do take away unhealthy igredients. For example I’ll make cookies without sugar and sweeten them with agave!

I sneak veggies into muffins and cheesecake. I added zucchini to cheesecake a la CKC and sweet potato or pumpkin into muffins, and instead of whipepd cream I add silken tofu!

I don’t usually feel the need to “sneak” healthy foods into people’s bellies…because if I mention it’s “healthy,” EVERYONE wants it! I think it’s cool that people are more interested in healthy living now, so long as it’s not obsessive. I love my burgers and will never give that up!
The only time I’ve snuck a healthy ingredient in was probably while baking. I think I subbed apple sauce for something else one time — and I don’t think it turned out as good

I snuck in oat bran as a substitute for bread crumbs in my turkey burgers. My boyfriend is not a fan of my health foods
So when he took a bite, he said, “Oh wow! I can actually taste the bread crumbs in this!” I giggled and told him, “No silly, it’s actually oat bran. Don’t hate me.” He didn’t know what to say after that but he still gobbled it down
i always add healthy food into dishes when i make them, but i guess i’m lucky that i don’t have to sneak them in. my fiance likes healthy food and he’ll try pretty much anything at least once!

I’ve definitely snuck in healthy ingredients before. One time I served my Boyfriend a salad with a Morningstar chicken patty and he was none the wiser. And spinach in the smoothie is always a winner.

I wiggle healthy stuff into recipes without telling the hubby. I *usually* tell him at the end of the meal, but I like to let him enjoy it first. If my parents dropped by more often, I’d do it to them too!

I love lightlife products, no lie. Esp. their “meat” sandwich slices. And I am a very, very sneaky cook. Especially when it comes to desserts–I love making (relatively) healthy vegan cookies and not revealing the truth about them.

One time I made my sister a blueberry smoothie and snuck a handful of spinach (she never eats spinach… it was hard not to cackle evilly while I made it) into it. She drank it and was all “It takes just like Boost Juice!” (Boost is a juice and smoothie bar like Jamba Juice). When I told her I put spinach in she wouldn’t believe me. But I did. And it was awesome.
