Not gonna lie, I’ve received some pretty awesome gifts in my lifetime. But the Vita-mix would definitely be in the top 3. I don’t mean to rub it in, but it’s seriously the best. kitchen. appliance. ever.
I literally use the thing at LEAST once a day. Usually more. Every morning, I start the day off with:
Banana Ice Cream
- 6 cubes of frozen soy milk (I like silk light soymilk)
- splash of not-frozen soymilk
- 1 frozen banana
- 2 packets Truvia
- 1 tbsp peanut butter (I usually use Better’n Peanut Butter)
- 2 tbsp galaxy granola (optional)
Throw the banana and splash of not-frozen soymilk into the blender and start blending. Slowly add your cubes of frozen soymilk and blend blend blend. (If you have a vitamix, you can just throw it all in at once.) Toss in the two packets of truvia (well, don’t actually throw the packets in… just the truvia) and mix until blended smooth.
Top with peanut butter and/or granola. Eat ice cream for breakfast, and rejoice knowing that it only has ~200 calories (give or take the pb+granola) but tastes like a huge bowl of super creamy ice cream.
But tonight, I wanted to try something NEW in the Vita-mix. So I thought, why not make my own peanut butter? Can’t be that hard!
I started by measuring 2 cups of roasted, salted TJ’s peanuts:
Then I started blending in the Vita-mix, and added ~ 1tbsp of honey…
And in about 5 minutes, I had my very own jar of peanut butter!
YUM!!! It’s creamy and crunchy and sweet and salty and amazing! I’m REALLY excited to top my ice cream with this tomorrow morning
I’m thinking next time I’ll make almond butter…
Which brings me to the question… what’s your favorite nut butter?
<3 Liz

you lucky stinker! nice gift
i love making my own stuff……you can get so creative with it.
my fave nut butter would have to be Smuckers chunky natural. plain, simple, pure. just nuts and salt.
can’t wait to see what else you whip up with your new gift!
woo hoooo! i’m diggin’ the ice cream for breakfast. it’s one of my faves! hehe. xo. great idea for the homemade pb, too!
Almond butter is my favorite! I want to make my own, but I don’t think my food processor could handle it.
Soooo jealous of your fabulous Vita-Mix and your ability to make rockin’ homemade PB! Peanut butter is definitely my favorite of the nut butters!!
Favorite nut butter for me is simply PB!
I could use a vita-mix…hmmm…Xmas list?
I grew up with a Vita Mix. My dad and I would go to the Texas State Fair and watch the demos. To say I LOVE my VitaMix is an understatement.
Yes. Seriously BEST kitchen appliance ever. I use mine daily, if not numerous times a day, as well.
Expensive, but will last for YEARS.
I love the new blog, girl! I think the switch is awesome, and it’s cool that your title is no longer tied down by a certain dietary path. I totally know how you feel about whether or not to be vegan. I go back and forth about it alllll the time. I feel better without dairy, but sometimes I miss dairy, especially cheese and greek yogurt. Plus, being vegan is SO hard in the real world where you can’t always make your own food. So yeah, I know how ya feel.
I love peanut butter – and all nut butters!
I love almond butter especially a brand named Barney Butter. I have had some fun creating my own though in my new processor. I think I’m fond of just about any nut butter though
I’ve heard of Barney Butter but I’ve never tried it! I’ll definitely have to keep an eye out for it
Hey girlie! Thanks for stopping by my blog! I loved all of your sweet comments!
I would love a Vitamix! looks awesome! My favorite nut butter is almond butter!! Yum! I want some now! ha
I could definitely go for a Vitamix right now, that looks delish! My favorite nut butter would probably have to be peanut but almond is a close second
Ooh, I must made almond butter in my Vitamix! Never made pb! I want to, though! Also, I want to make coconut butter! Love your blog!
I love the vita-mix! I’ve actually not yet made my own nut butter in it yet, though. I know! The horror!
I would love a Vitamix so yea you’re making this gal jealous.
I love nutbutters that have any extra flavor to them to make them more special.
I LOVE that you’re eating banana soft-serve for breakfast! What a fun way to start off the morning.
Separately, I’m completely jealous of your ability to create nut butter. Even though I think that could turn into a problem for me REALLY quickly. Adore.
I love peanut butter. In fact I love it so much I’ve been hesitant to try any other nut butters.
Cool! I had never heard of it until now!
xo
The Vita-Mix never ceases to amaze me! But I have a feeling that if I bought one it’d likely be sitting on a counter unused. I admire you for using yours 3 times a day!
Okay maybe not 3 times a day – I meant once a day! Sorry.
Haha, there are definitely times when I use it 3 times a day1!
Love this! What a great idea! My favorite nut butter is salted almond butter or Smucker’s natural peanut butter with honey
JEALOUS!! Gosh I want one so badly lol. Actually just a food processor would be good enough. Something so that I can make my own nutbutters and give them as gifts as well as try all the raw treats I want too!!
I like plain old peanut butter! Actually my favorite at the moment is Trader Joe’s peanut butter with roasted flax seed.
My Vita Mix was the greatest investment we ever made…..EVER!
