Vegan Mocha Muffins- Chocolate Heaven!

I’m not normally a big packaged food snacker. I personally think apples & bananas are like nature’s perfect little packaged snacks :) However, sometimes I’ve got a chocolate craving that needs filled, or I want to eat a candy bar-esque food, and I need something to fill in. I tried Kellogg’s Fiber Plus bar, and let me tell you, it didn’t disappoint. Only 120 calories and 9g of fiber, this thing was TASTY! Seriously, it reminded me of Kudos bars I used to eat as a kid.

I took a picture, but for some reason, it didn’t save on my camera… so I stole this from Kelloggs :)

It didn’t taste like fake protein bar chocolate (I hate that) so this would be a good substitute if you’re craving a candy bar. It’s not one of those bars that is all puffed rice with a little drizzle of chocolate on top. Nope, the whole bottom os coated in chocolate as well! Yum! Ok, on to real recipes!

Speaking of chocolate… I was craving chocolate & espresso… so it seemed like a good day to make Mocha Muffins, a delicious, chocolate-y vegan treat. YUM.

I’ve posted this before on my old blog, but in case you missed it, here’s what you need:

Mocha Muffins

  • 3/4 cup whole wheat flour
  • 1/4 cup chickpea flour
  • 1/3 cup brown sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1/3 cup dark chocolate chips
  • 1/3 cup apple sauce
  • 2 tsp instant coffee
  • 1 tsp vanilla

Dissolve the instant coffee in 3/4 cup of hot water, and let cool. (The water has to be pretty hot for the coffee to dissolve, but you definitely want to let it cool, or else it’ll mess up your chocolate!) Combine all your dry ingredients (everything but the coffee, vanilla and applesauce) and then slowly stir in your wet ingredients. Spoon into a mini muffin pan and bake at 350 for ~8 minutes, or until a toothpick comes out clean. If you use whole wheat flour and chickpea flour, each of these little treats will have a decent amount of fiber :) And let me tell you, vegan or not, these can knock out a chocolate craving like nobody’s business! YUM!

These are healthy enough for breakfast, but delicious enough for dessert ;)

  7. i made this batter and added a flax egg+vinegar, then turned it into waffles for mothers day. topped with bananas, strawberries, and a chocolate ‘pudding’/sauce (banana, cocoa, vanilla, stevia, soy yogurt and almond milk in food processor). The result: an amazing, decadent mothers day breakfast that my mom said (and i quote) were “sooooo goood!!! best breakfast ever!” at least 10 times. and its only 10:30 am.
