What I [got him to eat] Wednesday
Some people eat meat, some people don’t. I don’t. And to be honest, I don’t really care if other people do. It’s just not my thing.
But what I don’t understand, is when someone won’t not eat meat.
Some people are literally opposed to eating a dinner without meat. Maybe it’s to exasperate me. Or maybe it’s because some people just love Lunchables (you think I’m kidding? I’m not.), but whatever the reason, it’s quite a challenge to convince some people that a vegetarian dinner can be quite good. I knew I had a challenging mouth to feed.
Thankfully, my twitterbuds came to my rescue, once again. After lots of ideas, one particular suggestion rose to the top:
Mama Pea’s Chickpea Tacos

My guy friend (who is opposed to all things vegetarian) had never had chickpeas before. So I knew this was a risk. But I did it anyway.

I kept it simple with beans and lettuce. You can’t see the chickpeas, but I swear they’re in there
I liked the chickpeas so much, I ate some on the side.
Although the guy was hesitant, at first, to say anything positive about this dinner, he did go back for seconds. I’d say that speaks for itself 😉
Anyways, vegetarian or not, everyone loves nut butter.
(Actually, that’s not true, but they should.) And last night I was in the mood to make a new kind of almond butter. Don’t get me wrong, I love plain old A-butter, but I was in the mood to spice it up.
Cinnamon Swirl Almond Butter
- 1 cup of almonds
- 2 tbsp date sugar (you could probably use brown sugar)
- 1/4 tsp cinnamon
- 1/4 tsp salt (omit if your almonds are already salted)
- pinch of nutmeg
Does anyone have tips to get “totally-opposed-to-anything-not-meat”-eaters to try new foods?

I’ve tried to get my hubby to eat non-meat sometimes and it never works! He is very adamant about his food. One day I will sneak something in!

I think beans are a good base for a vegetarian meal cooked for a meat eater. My parents hate when I try to get them eat to ‘weird vegetarian food’ but they’ll eat anything with beans in it!
Cinnamon swirl almond butter sounds SOOO amazing!! i made some cinnamon toffee AB (from cinnamon toffee almonds, ahaha) and it was so good, too 😀

I’m not 100% vegetarian, but I actually prefer meatless meals! They are so much more unique than ones with meat, in my opinion. I wish I could make a vegetarian meal for my family but I haven’t figured out how to make them eat it yet unless maybe it’s falafel 😉

I can’t stand when meat eaters can’t stand the thought of eating a meal without meat. I mean, come on? I very rarely eat meat, and my husband is much more of a meat eater but thank goodness he doesn’t have a problem eating meatless meals. But it’s difficult to find things that my husband will like. I find making things he’s familiar with already(just meatless) really helps. But at the same time trying totally new things helps too because then he’s not expecting it to be full of meat. I’m always surprised by the things my hubby will(and wont) eat.
I love that recipe for roasted chickpeas, I make the chickpeas all the time, I’ve actually never had them in tacos, haha 😀
Those tacos look fabulous!!! Yum 😀 Luckily my mom is fine eating no meat and my dad does eat meat but can eat meals without it. His birthday treat is a big steak from a fancy restaurant because my mom doesn’t really make them anymore….so glad they are pretty supportive!
I come from a meat-at-every-lunch&dinner family, but at least my husband and I change it up. I think getting seconds definitely speaks for itself. At least you didn’t have to trick him into trying it!
