What I [got him to eat] Wednesday
Some people eat meat, some people don’t. I don’t. And to be honest, I don’t really care if other people do. It’s just not my thing.
But what I don’t understand, is when someone won’t not eat meat.
Some people are literally opposed to eating a dinner without meat. Maybe it’s to exasperate me. Or maybe it’s because some people just love Lunchables (you think I’m kidding? I’m not.), but whatever the reason, it’s quite a challenge to convince some people that a vegetarian dinner can be quite good. I knew I had a challenging mouth to feed.
Thankfully, my twitterbuds came to my rescue, once again. After lots of ideas, one particular suggestion rose to the top:
Mama Pea’s Chickpea Tacos
(Mama Pea also just published a cookbook, so you should totally check that out too.)
My guy friend (who is opposed to all things vegetarian) had never had chickpeas before. So I knew this was a risk. But I did it anyway.
The guy topped his with cheese…
I kept it simple with beans and lettuce. You can’t see the chickpeas, but I swear they’re in there
I liked the chickpeas so much, I ate some on the side.
Although the guy was hesitant, at first, to say anything positive about this dinner, he did go back for seconds. I’d say that speaks for itself 😉
Anyways, vegetarian or not, everyone loves nut butter.
(Actually, that’s not true, but they should.) And last night I was in the mood to make a new kind of almond butter. Don’t get me wrong, I love plain old A-butter, but I was in the mood to spice it up.
Cinnamon Swirl Almond Butter
- 1 cup of almonds
- 2 tbsp date sugar (you could probably use brown sugar)
- 1/4 tsp cinnamon
- 1/4 tsp salt (omit if your almonds are already salted)
- pinch of nutmeg
Does anyone have tips to get “totally-opposed-to-anything-not-meat”-eaters to try new foods?
<3 Liz
Great minds think alike! I posted a similar post today. My hubby is a meat at every meal eater, I was able to feed him meatless meal with great success.
I love cinnamon in my nut butters. I have been known to mix it in jar butter before 🙂
Haha I don’t know why I’ve never tried mixing it into store bought ones!
I eat meat, but my tastebuds prefer beans, tofu, seitan, etc. <3
xo.
I rarely eat meat and my hubby does, but as long as I make the dinner he never complains because he’s not a fan of cooking. I say if he wants to eat meat, make him make it!
As much as I try to avoid processed meat replacement items, they are a good place to start for those who refuse to eat a meal without meat (and no, I don’t understand that attitude either). Added that cookbook to my amazon wishlist…which primarily consists of vegan cookbooks. Those tacos sound delish.
Yes, I definitely want to get the cookbook! Mama Pea has so many great recipes!
I have never though to make chickpea tacos! I love how creative this idea is 🙂
My bf is a meat eater – so I always try to remake his favorites vegetarian style. I’ve made chickpea/black bean tacos, meatless meatball subs..etc. He’s slowly but surely learning to love vegetarian cooking! Great job on getting your man to love a meatless meal!
Ohh a meatless meatball sub sounds like a winner!
Argh it so frustrates me when meat eaters just won’t give things a try because they feel like a meal isn’t a meal without meat! I’ve desperately tried and tried things with my dad and brother like giving them quorn and asking them if they taste just as yummy and I think they did like it but they just said that the real thing tastes best because they were just in denial at the fact that it can actually taste good.
I definitely have to give those tacos a try – I LOVE chickpeas!
Haha my dad and brother are hard to convince too! My mom is willing to eat some vegetarian stuff, but not the boys in my family!
Hehe I totally don’t understand why people are against trying a meal without meat either. Luckily, I don’t come across a lot of people like that, but if I ever do, I’m definitely gonna have to give these tacos a try. They look delicious!
I have a hard time with people who won’t NOT eat meat for a meal too. I think it’s rather ridiculous! Good work on the tacos–they look great!
Gilr those tacos are seriously GENIUS for someone who refuses to eat something NOT meat. I totally could get my hubs to eat those!! My hubs is pretty good at eating vegetarian at times, but he always complains that meatless meals dont fill him up. Im trying to find ones that do!!
This one is definitely filling!! I’m eating some of the leftover chickpeas for lunch right now 🙂 They’re even good cold!
