What I Ate Yesterday
Life has been busy ever since I got home from Austin so I’ve spent surprisingly little time in the kitchen. I’ve been eating out a lot lately which is more due to social events than a lack of desire to cook. Yesterday was no exception!
I started the morning off with a protein shake. I’m kind of obsessed with the About Time Whey Protein Powder. (<– affiliate link) The Birthday Cake flavor is amazing. I had bought it for a couple of years but now it’s back in my rotation of cravings.
I know this looks boring but it was 1 frozen banana, a handful of ice cubes, 1/2 scoop of whey protein, and 2 tablespoons of peanut butter. Something about the frozen banana and the whey protein make the texture of this smoothie so light and fluffy. This hit the spot and kept me full through a busy morning of work.
After lots of emails and crossing things off my to-do list, I took a break for lunch. My coworker and I walked to the cafeteria across the campus which has some of my favorite salad bar fixings.
This massive salad was amazing. Black beans, pinto beans, pico de gallo and tons of veggies. Why do shredded carrots taste so much better than regular carrots? Does anyone else feel this way?
I had a productive afternoon full of phone calls but I was excited to wrap up work just before dinnertime. My best friend and her sister in law were in town from Virginia Beach so I met them at Lemon. I’d actually never eaten inside but it’s my favorite for take out so I was excited for the full dining experience. It did not disappoint!
I had aloo gobi with some naan. It’s literally what I get every time. The channa masala is good too, but this one is my favorite! I should mention that the rice was for the whole table… which is why that’s a lot of rice. I only ate half of my veggies (and all the naan…) and took the rest home for lunch! It was fun catching up with the girls!
After dinner, I headed over to a friend’s house for book club. We’re reading Lean In so it was a #girlboss kind of discussion. Love love loved it. I didn’t get home until 10:30 pm (which is past my bedtime) but it was worth it. I was so fired up I almost couldn’t go to sleep! It’s so inspiring being around women with such different perspectives. I can’t wait to keep reading!

mmmmm that giant salad looks amazing! And Ive noticed too how fluffy a simple banana protein smoothie can be. There must be something special about protein powder and bananas 😉

I am obsessed with naan lately- so good. What did you think of Lean In? I’m thinking that might be something I’d like to read.
I try to keep a good balance of going out and cooking at home. There’s far too many places I like to eat/want to try in Denver to always cook, but there’s also too many recipes I like/want to test to eat out all the time 🙂
I’ve heard a ton of good things about that protein but haven’t gotten around to it. Usually Mon/Wed we’ll have a meal from outside brought in 🙂 My fiance is off and thats his way of cooking haha 🙂
Yum!! Aloo Gobi is my JAM. I am with you on the shredded carrot train. I think they taste sweeter and more crunchy somehow. Is that even possible? haha. We don’t eat out a lot; we try to cook at home during the week and then maybe do a date night once a week or on the weekend so we can eat out then! If we do eat out during the work week, I always ALWAYS make sure we have leftovers for lunch the following day 🙂

When life gets busy I definitely end up eating out more so I hear you there, but your food all looks so yummy! Especially that naan. I nearly put naan & chicken tikka masala on our menu for this week, but ended up picking something else instead. Now I’m wishing I’d gone with it. Next week! 🙂
It looks like you don’t need to bother cooking! Everything looks so good, and healthy too. I’ve never had aloo gobi but I’m going to keep an eye for it to try it next time I go out for Indian.

Wow that protein shake looks like a milkshake. I absolutely love sharing encouragement with brothers and sisters in Christ. It’s ALWAYS really invigorating. All of your food looks SO good Liz. The foodie bloggers are constantly inspiring me to be balanced and enjoy the WHOLE spectrum of yummy delicious food.
