What I Ate [to celebrate] Wednesday!
Remember when I tweeted that I had good news but I could say what? Well now I can say it ๐
I got promoted at work!
I’m pretty excited about it! I don’t talk about my job much on here (because, that’s kind of blogging 101 of things NOT to do) but I love my job (I work in marketing) so I’m excited to take on some new responsibility.
Anyways! So it was a fun day at work, of course. That’s why this is a celebratory What I Ate Wednesday!

I started off with a fun breakfast:
Classic smoothie: 1 banana, 1/2 cup soymilk, 1 tbsp peanut butter, handful of ice, stevia and chia seeds. (I smeared the peanut butter around the inside of the glass!)
Morning snack:
I’ve been eating those peanut butter heady goo balls in the morning. Just a couple are a great pick me up! I usually go to the gym during lunch so these are the perfect thing to eat before a workout.
Lunch:
My lunches have been pretty simple, because I’ve been packing frozen lunches for the most part. It’s saving money, and if you get good ones… it’s pretty healthy!
These are only a couple of bucks, and they taste great! I can eat it quickly, after a lunch time workout, so it’s perfect!
Afternoon snack:
I love these. I love them so much, I don’t buy them very often because I can eat a box way. too. fast. But they’re pretty decent for you, and they’re easy to throw in my work bag for when I get the afternoon munchies.
Dinner:
What better way to celebrate than with Mexican food? We went to Su Casa, one of my favorite local Mexican places.
I had a veggie burrito, without the sour cream and cheese. It was so delicious! Peppers, onions, refried beans…. deliciousness! I forgot to take a picture until I was done eating… so you’re only seeing the half that went into a to-go box! (Obviously, the restaurant lighting made for some horrible picture taking.)
Dessert:
No celebration is complete without dessert! We took a trip to Sweet Frog for some fro-yo.
Enough said.
Congratulations on your promotion! It’s always a good feeling to know that you are exceeding others’ expectations. The last thing I celebrated was getting an internship position. I received the news when I least expected it so it was perfect!
That’s so exciting!!! ๐ I’ve loved following along on your internship adventure (I don’t know how you do it, PLUS school AND nannying!!!)

I love those Special K crackers too. Especially dipped in almond or peanut butter.
And yes, I said dipped. Why waste a knife when you can just stick the whole cracker in the jar?
I’m SO excited for our meet up!!! It’s going to be fantastic. And I pretty much love anything dipped in nut butter, but you’re right, those crackers are especially amazing. (I also love graham crackers dipped in dark chocolate dreams. That might be the most epic but simple combo ever.)
Today I’m celebrating the completion of my first semester.

Let’s see, I celebrated my dad’s birthday last weekend, and that was fun because I had wine and crab cakes!
Congrats! Mexican is my go-to celebratory meal too! Birthdays, passing exams, anything. All celebrated with some good Mexican food… and margaritas, of course!

CONGRATULATIONS! So good to know work appreciates you–and is rewarding you for it. Fro-yo=perfect celebration food. Hmm, my last celebration was…celebrating old friends who hadn’t seen each other in a while. And it involved pizza smothered in surprisingly good vegan cheese. Yesss.
