What I Ate [Over the Weekend] Wednesday
Time for a little recap of life. Ready? Here we go.
I tried to start my week of a little healthier, so this was my day of eats on Sunday:
Breakfast:
Ok, this was the same thing I always eat. Chobani 0% + stevia + blueberries + Udi’s granola.
Lunch:
I went to Chipotle after church and met up with Eric. I had a veggie burrito bol, with brown rice, veggies, black beans, every salsa (except for the hot one) guacamole and lettuce. Yes, I ate the whole thing.
Dinner:
We didn’t get hungry until later, since we ate such a big lunch, but eventually our appetite came back. I didn’t feel like doing anything complicated, so we just did pasta with asparagus for me, and meatballs for him.
My absolute favorite way to eat asparagus couldn’t be simpler:
Kitchen Grilled Asparagus:
- 10 spears of asparagus (with the ends snapped off)
- Cooking spray
- Parmesan Cheese
- Salt + Pepper
This works best on a George Foreman grill, or some other type of grill thing, but you could do it on a frying pan if you don’t have one. Just spray the cooking spray on your grill (or pan) and spread out your a-spears in a single layer. Sprinkle with salt & pepper and cook for 7-8 minutes on medium heat, until tender. Top with parmesan cheese.
I realize this is barely a recipe, but my goal is to show how EASY it is to cook asparagus! Don’t fear the greens!
As for the rest of the plate, it was Trader Joe’s high fiber pasta topped with Trader Joe’s sauce, which we spiced up with lots of seasonings. This dinner took literally less than 15 minutes, and we both enjoyed it.
And that’s how I’ve been enjoying my veggies this month!

oh thanks for the aspargus ideas!!! I have just bought some and wante dto try grilling it, a friend also sugegsted using it as a dip for a soft boiled egg.

best way to recover from a great weekend is usually lots of water! and green smoothies always seem to hit the spot for us 🙂
Absolutely! A lot of people crave greasy food the next day… I crave water and fruit! haha
I love asparagus so much so that I had it four times last week! I make mine very similar to the way you do but I bake it in a pan and sprinkle it with some bread crumbs in addition to the cheese. Your burrito bowl sounds fantastic but I’d definitely go for the hot sauce.
Ohhh adding bread crumbs is a great idea!!! I’m going to try that next time!
I heard a rumor they were “testing” brown rice here. I wonder if it’s on the menu full-time now. That bowl looks delicious!
I am a Chitpole fan, love how fresh their food is. I love making things from scratch but I do buy my pasta sauce from Costco, their Kirkland brand is so good and inexpensive.
I should make a ton and freeze it, maybe come summer.
Usually, getting back to my regular healthy habits is my favourite way to recover from the weekend… although, I have to admit, sometimes a greasy morning-after breakfast is in order if said weekend involved a bit too much alcohol 😉
I’ve always wanted to try Cook Out, I’ve heard so much about it. Seeing that it is regional though, I’m not sure when that will happen!
Haha they have the most incredible milkshakes! I don’t even like milkshakes that much but theirs are amazing! You can mix in as many things as your heart desires!!! Haha
