What I Ate [for $2] Wednesday
By now, if you’ve been reading my blog, you’ve heard about the $2 challenge, where I’m eating on $2 per day for $5 days, in order to know what it feels like to not get to eat what and when you want. Then at the end of the week, I’ll donate the money I would have spent on food and groceries, to an organization that helps world hunger.
And since it’s What I Ate Wednesday, let me show you what you can eat on $2…
Breakfast:
- banana – $.15
- 1/2 cup almond milk $.20
- Peanut butter $.25 (can’t resist the pb)
Total: $.60 cents
Lunch
- Rice $.20
- Beans $.30
I also added red pepper, salt, garlic, and pepper. Is that cheating?
Total: $.50
Snack
- 2 Bananas $.15 (on in the morning, one in the evening)
Total: $.30
Dinner… well… this looked exactly like lunch…(See picture above)
- Rice $.20
- Beans $.30
Total $.50
Grand total for the day: $1.90
What do I miss the most? Greens! I’m pretty sure my body is craving some leafy-goodness. I’m sure everyone else is dying for some meat or dairy… but I’m craving my vegetables 🙂
As far as the rumbling in my tummy… that’s kind of the point. And it really does put things into perspective. It’s amazing that for so many of us, the problem is eating too much. It’s interesting to get a sense of what it’s like on the other side of the fence, even if it’s only for a few days.

My little $2 a day challenge seems so small when you put it in perspective. But small changes can have a big impact.

Wow…when you break it down like that eating for $2 a day is tough. Your so limited on what you can eat… and that food adds up fast.

You’re doing great — I’m impressed. I do love rice and beans and could probably eat that over and over. What about oats? Or frozen greens?
Unfortunately, all I could buy for $10 was bananas, rice, beans, almond milk, and peanut butter! But if I had a couple dollars more, I definitely would have bought some cheap greens!
Wow, what a great challenge. Here in Austin, the food bloggers’ big philanthropy right now is raising awareness about hunger in our community by creating cost-efficient, simple recipes based on healthy items people could buy using food stamps and supplementing with food pantry items. This is an incredible challenge, and I’m going to add it to my list of potential challenges in my or personal “Summer Challenge” series. 🙂

That actually looks quite tasty although I am sure you will be bored and want some variety soon–I’ve said this before but I’ll say it again, this is an amazing project and definitely shines a light on an important issue!
Haha it’s funny because I’m so hungry by the time I eat, that rice and beans taste AWESOME! haha but I’m sure I’ll get sick of it soon!
Thats amazing! I know that my cousin participated in a 30 hour famine with her school to help raise money for the world hunger issues that so many of us deny or ignore… It’s such a sad subject 🙁 I’m very proud of you for doing this! Can’t wait to read about more updates in the next 5 days! 🙂
