What I Ate After Vacation
After a long weekend in the Outer Banks, I was kind of excited to get back into my regular routine. I guess I’m a creature of habit? Or maybe I was just happy to sleep in my bed? Anyways, I shared a few tips for getting back into a healthy routine after vacation and I’ve been putting those ideas into practice!
I had just restocked the fridge with yogurt and fruit so breakfast was this yogurt bowl topped with frozen blueberries and fresh strawberries.
This was so yummy. I might have to add yogurt bowls back into the regular rotation.
The morning was filled with many cups of coffee and around 10:30 I started getting hungry for a snack. I generally try not to buy cereal because I can seriously eat a whole box in one sitting, but I grabbed a box of Special K protein cereal because I was craving something crunchy.
I munched on this while answering emails. Does anyone else eat dry cereal or am I a total weirdo?
Once lunch rolled around, I went down to the cafeteria to make a giant salad.
Veggies, chickpeas, black beans, feta, pita, and hummus made this salad super filling. The afternoon flew by with lots of meetings and work to do but I managed to grab a quick snack from my desk drawer.
I always have random snacks on hand. If I don’t eat something in the afternoon, I’m practically starving by dinner. #dramatic
This was a mini peanut butter and chocolate chip Larabar.
After work, I stopped at my parent’s house for dinner! I mentioned last week that they moved here and we had our first family dinner on Monday night!
We picked up dinner from Panera and I had the vegetable soup with the kale and quinoa salad. I really love their vegetarian options! The kale and quinoa salad has a nice crunch to it.
I ended up having some nuts and a few pieces of dark chocolate before going to bed. I just have to have something sweet! As much as I loved vacation, I’m glad to be back in my routine.

What delish meals!!! We’re trying to get back in some kind of routine after moving and it is proving super difficult between a new apartment, a new childcare situation and a new job for Ry. Definitely taking your tips to heart!

The idea of cold cereal always calls to me, but for some reason I never end up going for it. I do think it would be a delicious snack though – so I say go for it!

So fun that your parents are close to you now and you can have meals together! I definitely feel so good getting back to my routine and normal meals after vacation. And of course, sleeping in my own bed 🙂
Your dinner from Panera looks delicious! I’m with you on needing a mid afternoon snack for sure! And while I like to have almond milk in my cereal, my husband will happily eat it dry!

There’s something about yogurt bowls in the summer that I just adore. Mmmm!!
My usual afternoon snack (if I need something) is a simple old apple + PB. Although, yesterday I had some plain Balkan yogurt with an apricot, blueberries, chia and hemp.
I always want candy in the afternoon, so lately I’ve been trying to make sure I drink a lot of water first. It helps!
I am the same way with cereal- I can eat so much in one sitting! I found that adding some almond milk, blueberries, or bananas added helps me stop at just one (okay maybe 2) bowl! I used to be an afternoon snacker, but now I’m in clinic/lab for school and we aren’t allowed to have food so i try to have a bigger lunch to hold me over!
Yum..so much deliciousness! I agree–my food routine is key for no stomach problems for me and vacation can very much disrupt that!
I have breakfast at 630 am so by 930/10 im dying. same with afternoon snack i need food around 4:30/5 to get through post work workout time!
I an definetely understand that. I enjoy my vacations but I also enjoy getting back into a set routine. It makes me feel better!
Now these are meals tailored for me 🙂 I do eat dry cereal too! I just ate some a few minutes ago 😀
