Summer Recipe Favorites
As summer is winding down and August is passing, I thought it would be fun to do a little round up of some of my favorite recipes I made this summer. I’m sure I’m not the only one who absolutely adores summer produce, but I’m sure I’ll be just as excited about the comfort food of fall which will be rolling in shortly. I promise not to go pumpkin-crazy like I might have done with zucchini!

These sesame quinoa ginger wraps, while being a little tricky to put together, were totally worth the effort. I’ll be making these again, even when the weather cools down, but it was awesome eating this out on the back porch. Served with some asparagus, these made a perfectly filling dinner!
This Mexican Lasagna is a great example of ugly-but-delicious food. It’s not exactly photogenic, but this is one of my favorite ways to enjoy Mexican ingredients. It’s gluten free, and can easily be made vegan if you just leave off the cheese! More of this will definitely be made in the future.
Not only is this one of the most highly search for recipes on my blog, this is also one of the easiest recipes on my blog. (Correlation?) If you need to use up some extra summer zucchini, this is one of my favorite ways to do it. It’s so easy, and so delicious. If you haven’t tried it yet, come on over and I’ll make it for you.
This one is a few more steps than my normal recipes, but totally worth the effort. I know I’m obsessed with Mexican themed recipes, but it’s just so delicious, and so vegetarian friendly. I can’t help it! This is a great one if you’ve got some extra sweet potatoes on hand. Plus, they’re super filling.
This was one of the Blue Apron recipes that Alex and I made, and it was my first time having Manchego cheese, and my first time blanching tomatoes. So many firsts, and it turned out delicious!
So those are a few of my favorites summer recipes! I still can’t believe how fast it’s flown by, but I’m definitely excited for fall! Alex and I are headed to Williamsburg this weekend, for a foodie packed weekend, so I’ll be back with lots of pictures on Monday! Have a lovely weekend!

I wanted to make zucchini boats last week but all of the zucchinis at the store were so small that I felt like I couldn’t fit anything inside if I tried. I should just give it a go anyway before all of the zucchini’s gone!
Ah, that’s no good! You gotta find some big zucchini!

As for me, this was a great summer for our little humble garden.
I loved taking a few tomatoes, some onion, basil, garlic and a little olive oil and making some delectable bruschetta.
It was a simple recipe, but the hubby and I absolutely loved partaking in it over and over again this summer. It definitely blew the Olive Garden away.
