This dressing is incredible versatile! It’s light enough for delicate greens like arugula or spinach, but it’s also flavorful enough for a crunchier leaf like romaine. My favorite way to use it is on top of a Greek salad with romaine lettuce, red onion, tomato, cucumber, and feta cheese.

How to Store Salad Dressing

Leftover salad dressing can be refrigerated for up to two weeks. Do not freeze dressing. If the dressing separates, simply whisk or shake well before serving. You can also double or triple this recipe if you’d like to prepare the dressing in advance.

Red wine vinegar can vary significantly in flavor and price. I like the Napa Valley brand which is organic and reasonably priced. Also, Pompeian makes a great budget-friendly option!

Ingredients

  • 1/2 teaspoon dijon mustard
  • Pinch of salt
  • Pinch of pepper
  • 3 tablespoons olive oil
  • 1 teaspoon mayonnaise (optional, see note)

Instructions

  1. Combine the vinegar, mustard, salt, and pepper in a small bowl.
  2. Slowly drizzle the olive oil into the vinegar mixture, whisking constantly to incorporate.
  3. If not serving immediately, use mayonnaise to avoid separation.
