I love baked oatmeal in all forms, but these baked oatmeal cups might be the most fun way to enjoy oats. These oatmeal cups are naturally sweetened with banana and a little maple syrup. You can customize the filling with your favorite yogurt and fruit. I like using vanilla Greek yogurt to add a little protein, plus blackberries and raspberries for fiber. I also like a sprinkle of coconut for a little crunch!
If you’re not planning to enjoy them right away, I recommend baking the cups in advance, then adding the filling and toppings when you’re ready to enjoy them. That way the oatmeal doesn’t get soggy. This recipe can also be great for picky eaters, because kids (or adults!) can customize their cups exactly the way they want them.

Ingredients
For the oatmeal cups
- 1 small ripe banana
- 3/4 cup rolled oats
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Filling ideas
- Greek yogurt
- Fresh berries
- Shredded coconut
- Granola
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mash the banana. Add rolled oats, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix well until all ingredients are combined.
- Grease a muffin tin and evenly distribute the oat mixture into the cups. Use the back of a spoon to press down the center of the mixture to form a shallow cup.
- Bake the oatmeal cups for 25 minutes or until they turn golden brown. Remove from the oven and allow them to cool completely.
- Once cooled, fill each cup with a dollop of Greek yogurt and add your favorite toppings.
