I love baked oatmeal in all forms, but these baked oatmeal cups might be the most fun way to enjoy oats. These oatmeal cups are naturally sweetened with banana and a little maple syrup. You can customize the filling with your favorite yogurt and fruit. I like using vanilla Greek yogurt to add a little protein, plus blackberries and raspberries for fiber. I also like a sprinkle of coconut for a little crunch!

If you’re not planning to enjoy them right away, I recommend baking the cups in advance, then adding the filling and toppings when you’re ready to enjoy them. That way the oatmeal doesn’t get soggy.
